Here in the northeast…Spring has finally sprung and the fresh strawberry season is just around the corner. Every year between the end of May and the middle of June, I stock up on organic strawberries from a local fruit farm. I freeze about 3/4 of them and then quickly use up the fresh ones that I have left.
One of the recipes that I love to use fresh strawberries with is my great auntie’s Strawberry Muffins. This recipe is really easy-to-prepare and makes a moist muffin that is packed full of flavor. We love serving these with some melted honey butter drizzled over the top.
Easy Strawberry Muffins Recipe
1/3 cup butter, softened
1/2 cup granulated sugar
1 large egg
1 1/2 cups all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. ground cinnamon
1/2 cup milk
3/4 cup fresh strawberries, washed, de-stemmed and sliced
Preheat oven to 350 degrees F.
In a large mixing bowl cream together the softened butter and granulated sugar until light and fluffy. Beat in the large egg and mix well. In a separate mixing bowl sift together the all-purpose flour, baking powder, salt and ground cinnamon.
Mid the dry ingredients into the wet ingredients, alternating with the milk until everything is combined together. Fold-in the sliced strawberries by hand until they are blended throughout the muffin batter.
Lightly spray a muffin pan with non-stick baking spray or line the baking pan with paper liners. Fill the cups 2/3 of the way full. Bake in a preheated 350 degree oven for 15-17 minutes or until done. Remove and let cool.

I love using strawberries in different ways. I have not yet made muffins with them. I shall have to try this delicious recipe, perhaps adding a bit of lemon zest to it.
Sounds and looks delicious and easy! Muffins are always so satisfying, any time of day, with a little butter, or just by themselves. The only change I would make is to leave out the cinnamon, as I don’t like it too much. I wonder if I could put a drop or 2 of almond extract in there? I think it would set off the strawberry flavor nicely.
