Easy-to-Make Granola Truffles Recipe

Granola Truffles RecipeFor the past 3-4 months I’ve been really working on changing my dietary needs into something a little bit more healthier. I’m now approaching the BIG 5-0 and it’s time to get serious about weight loss.

One of the things I’ve been enjoying the past few weeks in some good old fashioned granola which can be eaten alone as a snack or tossed into some homemade yogurt, ice cream, hot or cold cereal, etc. You can toss a handful in any cookie, bread or muffin recipe too.

Granola Truffles Recipe

1 2/3 cups heavy cream
7 tablespoons unsalted butter
1 lbs. semisweet chocolate, cut or broken into shards
12 oz. bag of Viki’s Granola for rolling truffle

Place cream and butter into a saucepan. Allow butter to melt on medium heat, stirring the whole time. Raise the heat just until the cream mixture comes to a boil.

Remove saucepan from heat, add the chocolate and stir until it is completely melted. Continue stirring until the mixtures thickens and cools a bit. Cover mixture with cellophane and place in refrigerator. Allow at least 2 hours to cool and thicken for at least 2 hours but mix 3 to 4 times during that time.

To form truffles use a small melon baller or spoon to scoop chocolate mixture into the palm of your hand. Roll into a ball then roll in your favorite Viki’s Granola. Place completed balls on a parchment-lined tray and refrigerate before serving.

    So easy and yummy looking. These would be something different to bring to a get together. I like the addition of the granola on the outside.

    This is an easy recipe for truffles, but I like Vivki’s Granola so much I would probably eat it plain and roll the truffles in crushed nuts and/or oatmeal

    Can it be rolled in peanut butter then nuts or will it make it unhealthy

    I love chocolate & I love granola, so this can only be good! I would definitely make this. Plus, it seems pretty easy to do, which is a bonus.

    What a great idea for truffles. I like to eat healthy, and lose weight, and try to make sure my snacks are healthy, too. I’d love to try this!

    Dude, seriously! Heavy cream butter, and A POUND of chocolate? All the granola in the world can’t make that healthy! 😀

    Still, it sounds delicious and something I would totally eat. Lots and lots of them.
