I have a grand daughter who will be 7 years old in a few months. She’s involved in various sport groups, girl scouts, church youth groups, etc. I’m often asked to bake up various treats for their bake sales and one goody that I like to make is homemade chocolate brownie muffins.
Basically…it’s a brownie recipe but instead of baking them in a square baking dish…you bake the batter in a muffin tin. This gives you the perfect portions and makes them better for bake sales! You can place each muffin in a little cellophane or sandwich size baggie and your ready to go!
Chocolate Brownie Muffins Recipe
12 Tbsp. Cocoa Powder
2/3 cup vegetable shortening
2 cups granulated sugar
4 large eggs
1 tsp. vanilla extract
1 1/4 cups all purpose flour
1 tsp. baking powder
1 tsp. salt
1/2 cup semi-sweet chocolate chips
Mix chocolate, vegetable shortening, large eggs, granulated sugar and vanilla extract in a large bowl. Add in the all purpose flour, baking powder and salt. Stir in the milk chocolate chips and mix until well blended. Pour the chocolate batter into a muffin tin that is lightly greased or lined with paper baking cups. Bake for 12 to 14 minutes at 350 degrees F or until done. Remove from oven and let cool.

I would probably substitute semi-sweet chips , but otherwise I love the recipe. I love the idea of baking brownies in muffin tins because I hope that would enable me to use portion control and not eat too many!
If I saw these gems on a bake sale table, I would totally buy one. Or four. I confess that when I bake brownies, I usually use a mix, although I’m generally a scratch baker. You’ve got me rethinking that, now, though!
Those look chocolatey & moist. I love muffins, and making them chocolate is a big bonus!
Brownies can be so rich and dense, so a nice lighter muffin would be nice. I like to experiment with healthier ingredients in brownies and still have them edible by most! Most just want a tasty product for a bake sale item.
What a clever idea to bake them in muffin tins. For a bake sale I’d probably use the baking cups.
Oh gosh, I can just taste these. It is not a surprise taht they are popular and that you don’t even need to ice them.
