Apples are such a versatile fruit. You can snack on them any time of the day or use them as a tasty ingredient in your favorite recipe. I love eating homemade apple dumplings, pies and of course…apple cake!
Today’s recipe is courtesy of the great folks over at Coco Joy. I don’t know about all of you…but this cake looks absolutely delicious! Definitely adding it on my must-bake list!
Apple and Almond Cake Recipe
1 ½ cup Whole Almonds
2 tsp. Almond Extract
¾ cup Sugar
½ cup Coco Joy Coconut Oil
1 tsp. Cinnamon
½ tsp. Sea Salt
½ Red Delicious Apple; thinly sliced
2 tbsp. Brown Rice Flour
½ cup Sliced Almonds
2 tbsp. Corn Flour
2 tbsp. White Sugar
1 tsp. Baking Powder
3 Eggs
Preheat oven to 356 degrees Fahrenheit. Grease an 8-inch spring form pan with coconut oil and line bottom with grease-proof paper.
In a food processor, combine almonds, sugar, and salt. Blitz until almonds are very finely ground, about 30 seconds. Add cinnamon, brown rice flour, corn flour and baking powder; pulse until they are mixed through.
Add eggs and almond extract; process until a think batter forms. Pour in coconut oil and process until batter is well combined, about 20 seconds.
Scrape batter into prepared pan. Arrange apple slices over the top. Sprinkle evenly with sliced almonds, then with white sugar.
Bake until a toothpick inserted in the center comes out clean, 45-50 minutes. Let cool in pan for about 20 minutes before serving. Run a knife around the edge of cake before removing sides.


This is a very interesting recipe. I have never used brown rice flour or corn flour in a recipe. I might use applesauce instead of coconut oil to achieve more of an apple taste.
This looks so decedent. I know I would love to try this recipe, but I hope I do as good baking it as in the photo.
This looks so tasty and I like that the recipe uses fresh apples in it. This along with the use of coconut oils and the 2 different types of flour makes it different than some of the other recipes I have seen. I have heard so many positive benefits of coconut oil that I would like to include it more often.
I think this would be great. It would smell amazing while baking. I can imagine it would be really good for a breakfast or a dessert. I am adding this one to a must do! Looks terrific!

This does indeed look like a nice gluten-free apple cake. We’re not a GF household (thank goodness!), but it’s nice to have some good GF recipes bookmarked. We’re lucky to have lots of apple trees on the property we rent, and I’m always on the lookout for new recipes using apples. Thanks!
Well, I do like apples & almonds, so I’d give it a try. I admit I’m wondering about how little flour there is (of any kind) but I’d try it!
I’m not gluten free, but I do sometimes like to make recipes that have alternative flours. I never thought of putting almonds and apples together, this cake sounds wonderfully delicious and healthy! I’d love to try it!
I don’t have either of those flours. They would make a different texture than what I’m used to. I like the flavors in it.
My mom would love this recipe since she likes almonds. I have corn flour but not rice flour so I’ll have to get some. I bet the cinnamon makes it terrific.
