Monica Auslander, leading nutritionist who developed Essence Nutrition Registered Dietitians, has this awesome recipe below for people who need a delicious and simple meal that will not leave you feeling guilty afterwards. The recipe below is for a quinoa salad stuffed avocados which are great for a quick bite that doesn’t leave you needing a nap.
Quinoa Salad Stuffed Avocados Recipe
1 Avocado
1/4 cup dry quinoa
1/2 cup chickpeas, rinsed and drained
1 cup cherry tomatoes, halved
1/4 cup chopped cilantro
1/4 cup chopped spinach
1 Tbsp water
1 Tbsp dijon mustard
1/2 tbsp lemon juice
1/2 tsp honey
1/4 tsp cumin
1/4 tsp garlic powder
Cook the quinoa to package instructions and set aside. Dice the cilantro and spinach. Combine with mustard, lemon juice, honey, cumin, and garlic. Add one tablespoon of water to the dressing until it is homogenous. Add tomatoes and chickpeas to the quinoa. Pour dressing over the quinoa mixture until it is evenly coated. Cut the avocado in half and remove pit. Top with even parts of quinoa salad.

I haven’t used quinoa in many recipes. I like any recipe that shows me how to use it and since I love avocados I appreciate a recipe that is stuffed with quinoa.
I’ve never had quinoa. Not sure why. I do like avocados and all the other ingredients in this dish.

I love the idea of quinoa salad. I’m a little iffy on the avocado, lol. Even though I love guacamole, I don’t really eat whole avocados. I might put the quinoa salad in tomatoes!
What an unusual way to use quinoa! I do like quinoa, but I don’t often make it, and when I do, I usually serve it hot, as a side dish. But in the warmer weather, I love salads that incorporate grains, so this would be perfect. Thanks for the idea.
I like this recipe, and do eat quinoa and chickpeas pretty regularly. I like to use the smaller avocados too since they’re usually on sale. I love onions also, so would have to sneak some into this recipe.
I havent eaten much quinoa, although I did like it. I really ant poronouce the word. I think it is like key wa or close to it. It hasnt uich caught on here in the midwest I dont know why. To me it tastes like rice and barley combined. This recipe does look good though!
