One of my favorite types of “quick” breads to make happens to be banana. Every 2-3 months my local produce market will put bananas on sale for a good price and I’ll stock up by purchasing about 12 pounds. I bring them home and I freeze a good majority of them, so that I can make homemade banana bread, muffins, cupcakes or cakes through the next few months.
When I make the bread…I use the following recipe but I do omit the walnuts due to a nut allergy. Other than that, I follow this recipe which makes a very nice moist & flavorful bread. Sometimes when I’m in a chocolate mood, I’ll toss in a 1/4 cup of semi-sweet chocolate chips into the batter during the mixing process.
Homemade Banana Bread Recipe
1/3 cup butter, melted
2/3 cup granulated sugar
2 medium eggs
1 cup mashed ripe bananas
3 tbsp. milk
2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup chopped walnuts, optional
Preheat oven to 350 degrees F. Spray a loaf pan with non-stick cooking spray.
In a large mixing bowl beat together the butter, granulated sugar and eggs until fluffy and creamy. Blend in the mashed bananas and milk.
In a separate mixing bowl sift together the all-purpose flour, baking powder, baking soda and salt. Gradually beat this mixture into the wet mixture until well combined. If you want to toss in walnuts or chocolate chips, now is the time to “hand stir” them into the batter.
Pour the batter into your prepared loaf pan. Bake in a preheated 350 degree F oven for approximate 45 to 50 minutes or until done. Remove and let cool.

ohh I have to ripen my bananas and try this recipe, our family loves banana bread! We have a bunch of bananas from Costco and they are awesome for baking! My husband doesn’t like it too sweet so I have to skip the chocolate chips.

I also haven’t had banana bread in a long time. I wish I could figure out when the local store has their big bags of bananas for $1. Seems like it’s on days they have banana sales and I just need to get there early before the discounted ones are gone! I don’t have a freezer but have dehydrated them and mashed them to use in things. Hungry for them now, lol.
I make banana bread every few months because my granddaughter loves it. Funny because she does not like bananas. This looks like the basic recipe I use and it always comes out moist and delicious. I’ll have to remember the tip about placing bananas in a bag to get them to ripen faster.
My freezer always has a good stock of bananas, too, which I use for baking, smoothies, and for desserts (I have a Yonanas machine). And my local grocery store has bananas on sale this week, so your recipe is very timely! I like that it doesn’t have too much butter and that the butter is melted–saves the step of creaming it. I love making banana bread and this recipe is very similar to one I often make. I often use more walnuts and sometimes I add lemon juice.

A very nive recipe. I haven’t made banana bread in a while, but I’m going to now. We always have bananas that ripen so quickly – and this is a wonderful way to use them. Seems like a nice easy, recipe. My mom can’t eat walnuts, either, so I think I would just give this a little tweak and throw in some dried cranberries, for contrasting tartness. Thank you!

Well, that looks simple enough. My mother always said that to make banana bread you should use ‘overripe’ bananas, almost black. It just so happens that I have that. It’s make this or compost them!
If you need to ripen bananas quickly…place them in a paper lunch bag for a day or two!
this sounds delicious – I haven’t made banana bread in ages. I used to be able to shop at a grocery that had reduced produce, and they often had ripe bananas – I miss it!!! but I want to make this, I love this bread and with chips it sounds irresistible!
