How many of you enjoy a good salad? I know I do! I make a wide variety of veggie and fruit salads for my family to enjoy every week. To keep things interesting, I’m always looking for new recipes that have unique & healthy twists to them like the one that I’m sharing with all of you today. It incorporates most of my favorite fruits, all in one healthy recipe! YUMMY!
The recipe was created by Chef Anthony Stuart, Executive Chef at Pritikin Longevity Center + Spa. Serving size is a 1/2 cup.
Banana Berries and Cottage Cheese Salad Recipe
3 each bananas sliced ¼ inch think
¼ cup fresh raspberry
¼ cup fresh blueberries
¼ cup fresh strawberries cut into halves
¼ cup fresh orange juice
Pinch ground nutmeg
½ cup fat free low sodium cottage cheese
Combine all ingredients in a large bowl and mix well. Chill and serve garnish with fresh mint.

I would love to have this for breakfast and lunch any day. What I like about it is that it looks so good and I bet it is still filling enough to feel satisfied. Some of the lo calorie foods leave me still feeling hungry but with the banana and other fruit this would do the trick.
I love a recipe that contains a lot of fresh fruit. My mother always had cottage cheese with a lot of fruits. I predfer yogurt with fruits.
I love cottage cheese, love berries, and love bananas…sounds like a winning combination. While I’ve put strawberries and blueberries in cottage cheese before, I’ve never had it with bananas or orange juice. Sounds good and healthy.

I love eating sdads but sometimes I get bored with the same old combos. This recipe is one that I have never heard of before and I really think I would like it. The orange juice and nutmeg combo sounds really good. I will try this one soon thank for sharing and have a nice weekend.
Oooh, this looks lovely. I love cottage cheese with fruit, but I’ve never thought to put a grind of nutmeg on top. I don’t think I’ve had fresh raspberries, blueberries, and strawberries on hand all at the same time, but even one type with the bananas and other ingredients would be good.
I love cottage cheese and used to get the bags of Lucern dry curd cottage cheese to help get in my protein. I can’t find it any more and the prices keep going up on the other products. I like the fresh mint garnish on this–a nice touch.
