The recipe is courtesy of Chef Anthony Stewart, Executive Chef at Pritikin Longevity Center+Spa, has created fruit and vegetable dishes that incorporate the sweet taste of fruits mixed with the hearty flavor of vegetables. The recipe will make eight 1/2 cup servings.
Pritikin’s Pineapple Hummus Dip Recipe
15 ounces garbanzo beans canned, no salt added, drained
1/4 cup lemon juice (adjust according to taste)
1 tablespoon garlic fresh, minced
2 tablespoons Italian parsley fresh, leaves chopped
1/4 cup dill fresh, chopped
1 cup pineapple fresh or canned (no sugar added) diced
1 dash tabasco sauce
1/2 cup celery chopped
Puree all ingredients in food processor. If mixture is too thick, add 1 tablespoon water. Serve with raw vegetables.


This is another recipe I would like to make. I have dried chickpeas I need to rehydrate, but they would do nicely. I bet the pineapple helps with digesting the beans too.
This is an interesting recipe to me. I am a hummus fan but I would think that the addition of pineapple would make it to sweet for my tastes. It would be fun though to think about other fruits that might be more appealing.
MY husBand really loves hummus, but I never thought to add pineapple to it. Adding fruit to hummus really opens my thought to a big variety of flavors.

I so love hummus and love to dip pita bread in it and veggies. I have never heard of this recipe but it sounds super yummy and easy to make. Thanks for sharing this one I think the whole family will love this one. I love hummus because it is such a healthy alternative.
