Easy Chicken and Rice Soup Recipe

chicken and rice soup On a cold winter day, nothing warms you up more than a good bowl of homemade soup! Although we eat hot soup year-round here at my home, we really appreciate it even more during those blistering cold winter months.

Years ago my older sister shared with me her recipe for Chicken and Rice Soup. Since that time, I tweaked it a little bit to suit my family’s needs. For example: Shelly and Sam are not fond of carrots in their soup, so I’ve completely omitted them over the years.

Easy Chicken and Rice Soup Recipe

1 tablespoon Butter
1/2 cup onion, finely chopped
2 ribs celery, sliced
1 teaspoon fresh garlic, minced
6 cups chicken stock
1 cup water
2 cups cooked white rice
2 cups cooked chicken, chopped
2 tablespoons parsley
1/2 teaspoon salt
3/4 teaspoon ground black pepper

In a large skillet melt the butter. Stir in the chopped onion, sliced celery and minced garlic. Saute for 3-4 minutes. Remove from heat.

In large stock pot and over medium heat combine together the chicken stock and water. Bring mixture to a boil and stir in the rice, chopped chicken, parsley, salt, ground black pepper and the ingredients from the skillet.

Lightly boil this mixture over medium heat for 7 to 9 minutes or until it’s very hot and everything is heated through. Remove from heat and serve immediately.

Note: For larger families, you can easily double this recipe. We like it served along side some bread sticks, freshly made dinner rolls or crescent rolls.

    I love to make chicken soup , especially on cold days. We do like carrots in our soup, so I would add them back to this recipe. Sometimes I saute bell pepper and add too.

    Ah, by coincidence, I have a chicken carcass in the refrigerator now and was planning to make stock tomorrow. Usually I just put the stock in the freezer, but you’ve got me thinking about how delicious and warming some nice homemade chicken soup would be. Perfect! Love the addition of the cooked rice. Thanks for the inspiration!

    Soup rec ipes are always appealing this time of year. We are supposed top have oddly warm temps for the next 5 days (in the 60s)–but then it’s back to freezing. So, I might try this around Wednesday!

    Nothing beats fresh chicken soup. This had the perfect simple ingredients to bring out the best flavor. Rice is a nice addition.

    This is a nice economical recipe and I’m finding more options for the chicken stock in stores. Even the 99 cent stores have the organic low sodium stock, which I prefer. I like the brown rice for a bit more fiber too.

    This sounds like the perfect meal for a cold night! Especially with some nice crusty bread! I would add the carrots back in to sneak in some veggies. Thanks for sharing!

    I adore chicken and rice soup. It’s my go-to canned soup when I’m sick. There’s something so comforting about it in a nostalgic way. I have my mom’s recipe, but she adds lemon- and without it its bland. Thanks for this recipe! I can’t wait to try it out.

    I am not sure that I have ever had this soup before. I would really love to try it we too love to eat soup year round in our house. This recipe sounds super easy to make thanks for sharing this one. It is raining here and we may even get some snow so this sounds perfect.
