We’ve all been told that the most important meal of the day is breakfast but how many of us actually enjoy a good home cooked breakfast every day? For myself personally, I tend to only go for a nice breakfast on weekends but I’m trying to change that this year. I love homemade French toast and I think I would really enjoy this twist on the old classic!
Today’s guest post recipe is from the folks over at Carrington Farms. The recipe and photo have been used with permission. The recipe makes 6 servings.
Coconut Banana French Toast Recipe
1 banana
1 cup milk
1 cup coconut milk
1 teaspoon vanilla
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/2 teaspoons cornstarch
1/4 teaspoon salt
12+ slices bread
2 T Carrington Farms Coconut Oil
Heat griddle and brush with coconut oil. Blend remaining ingredients (except bread) in a blender until smooth. Pour into a shallow dish. Submerge each slice in mixture and place on griddle. Cook till golden brown, then flip over to cook other side. Serve with maple syrup.


Breakfast is my favorite meal and this recipe looks good to me since I like coconut quite a bit. I think the addition of a banana is interesting and should make it extra healthy.
I like this French Toast recipe . it is different . I have never made French toast without eggs.
It looks really good. I would be bad & use those extra thick slices of Texas Toast bread, lol! Yum!
Interesting–I’ve always made French toast with a soak in an egg-based mixture. This would certainly be a nice change. Thanks for sharing the recipe.
I’m not a breakfast person but would make this for a brunch with GF bread. I’d add hydrated chia seeds since some use this as a replacement for egg. I do like coconut with nutmeg and cinnamon too.
I would like this but I am afraid hubby isnt a fa of coconut. I was tryiing to figure out why the cornstarch until I looked close and there isnt an egg in there. I would think this would stand up well to just having powdered sugar or something really light on top of it since it has several sweet things in it. I would give it a try for sure!
Some french toast sounds very good. It just wouldn’t be this recipe since I dislike coconut.
