Chocolate Peanut Butter Granola Cookies Recipe
I love to bake…especially homemade cookies. I love a good cookie made from scratch with some added peanut butter and chocolate. Oh yeah, that will satisfy my sweet tooth just fine. I’m all about easy, so I tend to make drop cookies more than cut-outs. How about you?
For this year’s Big Game, try offering some delicious homemade Chocolate Peanut Butter Granola Cookies. Between nachos, wings, pizza and other greasy snacks, “Superbowl Snacks” don’t have the most healthy reputation, but these cookies are a delicious and better for you option made with natural ingredients.

Chocolate Peanut Butter Granola Cookies Recipe
2 cups Viki’s Original Granola, divided
1 cup chocolate peanut butter
¼ cup of favorite dried fruit (raisins, cranberries, blueberries)
1 large egg
Pinch of salt
Preheat oven to 350° and line 2 baking sheets with parchment paper. Pulse one cup of granola in a food processer until finely ground; transfer to a medium bowl. Add the peanut butter, egg and salt. Using a stand up mixer or electric mixer beat the mixture at low speed until smooth. Add the remaining granola and dried fruit, beat just until smooth.
Form the cookie dough into 12 balls and place evenly on the baking sheets. Flatten the balls with the tines of a fork in a crisscross patter into 3-inch disks. Bake one sheet at a time in the middle rack for 15 minutes, until the cookies are lightly browned around the edges. Transfer to cooling racks and cool completely.
