Are you looking for a way to incorporate more vegetables into your diet? How about this delicious looking soup! I love sweet potato soup but never thought about combining it with Kale.
The recipe is courtesy of Chef Anthony Stewart, Executive Chef at Pritikin Longevity Center+Spa, has created fruit and vegetable dishes that incorporate the sweet taste of fruits mixed with the hearty flavor of vegetables. This recipe will make 16 servings so it’s great for serving a large family or a crowd!
Pritikin’s Sweet Potato Kale Soup Recipe
2 pounds sweet potatoes peeled and diced
1 onion peeled and diced
1 carrot peeled and diced
1 tablespoon fresh sage finely chopped
2 tablespoon garlic minced
2 quarts low-sodium vegetable stock
1 tablespoon low-sodium soy sauce
1 cup celery root peeled and diced
1 bunch kale cleaned and de-stemmed, then sliced thin
Instructions:
In a stockpot, add all ingredients except kale. Cook over medium heat until all ingredients are soft, about 1 hour. Puree and put back on heat. Add kale and cook 15 minutes more.

I am always looking for mOre vegetable recipes. This soup sounds delicious. I don’t use celery root very often and It addps such a unique flavor to recipes that I need to remember to buy it again.

I am not much a fan of kale, but can tolertate it in something like this. I think if all of the kale taste was gone iit wouldnt be too bad! I really love a good potato soup on cold winter days its filling and warm.
This would be nice after a day of play in the snow. I make a Portuguese Kale soup that I discovered after a visit to Cape Cod that is a family favorite. I think this one would be equally as good.
