Salmon and Asparagus with Pepper Puree Recipe

How many of you enjoy eating fish? I admit, I’m not a big fish eater but I do love seafood. Over the past year hubby and I have been trying to eat more fish so that we can get our Omega 3. Plus, eating fish has less calories than most meats so it’s great for those who are watching their weight.

The great folks over at Medifast sent over this recipe for me to share with the Two Classy Chics blog readers.

Salmon and Asparagus with Pepper Puree Recipe

Salmon and Asparagus with Pepper Puree Recipe

Prep time: 20 minutes Cook time: 25 minutes Yield: 1 serving

6 oz raw salmon
1 cup fresh asparagus
¼ cup red bell peppers, diced
¼ cup raw tomatoes, diced
1/8 tsp salt
½ cup water
2 Tbsp red wine vinegar
10 sprays non-stick cooking spray
¼ tsp pepper

Place salmon on medium heated grill. Grill for 6-8 minutes per side. Dice tomatoes and peppers; place on aluminum foil sheet and lightly spray with non-stick cooking spray.
Wrap in aluminum and grill with the salmon for about 5-8 minutes. Boil water for asparagus. As it heats, clean and trim asparagus ends. Leave as whole stalks, or cut in half. Place in boiling water, and cook about ten minutes or until tender-crisp. Remove peppers and tomatoes from grill and let cool two to three minutes. Place in a blender, add vinegar, and blend until the consistency of applesauce. Arrange asparagus on a plate with salmon on top. Drizzle puree over salmon.

    WE love salmon and are always happy to try a new recipe. I have made a pepper tomato sauce to serve with fish, but usually roast the vegetables first. I always love to have asparagus

      I love asparagus too…especially with a good homemade hollandaise sauce. YUM!

    Salmon with fresh vegetable is one of my favorite dinners. I like how simple this recipe is because I find that is the best way to prepare salmon. Sometimes we have it with just a little dill or lemon.

      I agree Mia. I always encourage people that if they dislike fish in general to try Salmon and to do a simple recipe with it. I like fish but not all fish. I’m picky.

    Sounds delicious! Salmon is a wonderful fish to fix as you can dress it up in so many different ways and it still tastes great!

    You know, I’ve never had salmon! I’m not sure why. In KY, we always had access to fresh catfish, so we usually had that, I guess. I’ll have to try some salmon.

    I love salmon and the recipe looks really good, but now with legally GMO grown and unlabeled salmon everywhere out there, I don’t want to buy it anymore. Costco said they won’t sell it, but there isn’t a Costco near me 🙁

    I like all fish and seafood but my favorite is salmon. This would be a very yummy dish. I’d add a bit of garlic to the sauce. .

    I make a yellow pepper puree (I guess you would call it, we call it sauce!) with roasted skinned yellow bell peppers, olive oil, vinegar, salt and pepper that is them great cold on a salad or hot in an application much like you have done here with the fish.
