Even though the Christmas holiday is over with…we still have to get through New Year’s Eve and New Year’s Day. What better way to do it than with a good chocolate coconut cake for dessert! The following recipe is courtesy of The Vitamin Shoppe.
Chocolate Coconut Cake Bites Recipe
1 egg, large
1/2 tsp low sodium baking powder
1/4 cup unsweetened almond milk
3 tbsp Coconut Secret Coconut Flour
3 scoops plnt chocolate protein
1/2 cup unsweetened applesauce
1 cup (170g), Total 0% Greek Yogurt Plain (Fage)
4 Tablespoons, Now Real Foods Unsweetened, Shredded Organic Coconut
* Ingredients are available at the Vitamin Shoppe. You can find them in their online store and at the retailer’s stores across the nation.
Directions: Coat pain with coconut oil. Combine ingredients (minus the coconut flakes) into the coated baking pan. Add coconut flakes on the top before placing in oven. Bake at 385 degrees for 30 minutes. Remove from oven and let cool. Cut into 12 pieces.

I love that this recipe doesn’t have a lot of sugar! I like using Greek yogurt and applesauce when baking healthier, but I’ve never tried using coconut flour or almond milk.
I have never made a healthy coconut cake nor used coconut flour or plant protein. However I am always willing to try to make a different recipe and if I Like it that would be great.

I’ve used apple sauce in baking & it worked fine. I’ve never tried coconut flour, but I love coconut, so I bet I would really like these.

I love healthy recipes like this and didn’t know The Vitamin Shoppe had recipes like this. The word bites makes me think they are less calories, ha, ha. Maybe the key is cut them into smaller pieces and eat just one!
This recipe sounds amazing and pretty easy to follow. I would love to try it with the yogurt that sounds healthy. I can pass up sweets but this one sounds sounds like one I would love to try and my family would love it too thanks for sharing.
