We love Mexican cuisine and seriously…we could eat it every day for breakfast, lunch and dinner. Making your own homemade burritos is really easy to do and this particular recipe is no exception. We typically enjoy them for breakfast or brunch.
The ingredients list is per burrito. You can easily double and triple up the ingredients to make as many as you would like. For the shredded cheese, I like to use a pre-packaged mix that I get at the grocery store that is made for taco’s and it includes 3 cheeses blended together. You can use whatever you have on hand.
Easy Breakfast Burrito Recipe
Flour Tortilla
3 Strips of Bacon
2 Eggs, Scrambled
2-3 Tbsp. Tomatoes, Finely Chopped
4-5 Tbsp. Shredded Cheese
2 Tbsp. Guacamole
Salt and Pepper – Optional and To-Taste
Fry up your bacon as you normally do, drain away grease and set aside. Make your scrambled eggs (I use eggs, milk, salt and black pepper), fry them up and set aside.
Warm up your flour tortilla in a skillet or in your microwave just until it’s warm. Spoon the scrambled eggs into the tortilla and then place your 3 slices of bacon on top. Spoon in some guacamole and sprinkle the shredded cheese on top along with some finely chopped fresh tomatoes. Roll up your burrito and enjoy!

We make regular burritos a lot! By regular I mean American Regular~ Cooked lean ground meat, black olives. Chopped tomatoes. I never make breakfast burritos at home which now that I think about it is kind of weird since they are one of my favorite if I am out buying breakfast. I think I would really like the addition of the guacamole.
We love breakfast burritos. I generally do sausage rather than bacon unless I have bacon left over (which is rare) Hubby also really likes hashbrowns in his and sour cream. I always add the gauc cheese and black olives.
I used to make something similar to this but without the bacon, since I don’t eat pork. But it’s been so long, it’s like I completely forgot about how good they are! Thanks for this post–I think I should make these again soon.
