Looking for a really cool Halloween party idea? If so, I’ve got a really cute idea to share with all of you today…courtesy of Chef Anthony Stewart, Executive Chef at Pritikin Longevity Center + Spa. This recipe makes five 1/2 cup servings.
For spooky, chocolatey fun, carve out oranges and fill with Pritikin’s Chocolate Mousse.
Chocolate Jack O’Lantern Recipe
1/4 cup water cold
1/2 cup cocoa powder unsweetened
1/4 cup Splenda granulated
2 teaspoons vanilla extract
12 ounces tofu silken, extra-firm
In a medium saucepan, add water and warm over low heat, bringing to a low simmer. Add cocoa powder to saucepan, stirring constantly until the mixture becomes a fudge-like consistency. Remove from heat. Add Splenda to fudge, mixing well. Add vanilla extract, mixing well.
In a food processor fitted with a metal blade, add tofu and chocolate fudge mixture. Process until mixture is smooth and creamy. Fill your hollowed out oranges. Keep refrigerated until ready to serve.

This is absolutely adorable! I am going to a party tomorrow and this recipe will be simple and perfect. Plus, I can get the kiddos to help by eating all of the orange that I carve out, great time of year for extra vitamin C!
I love the idea of using an orange instead of a pumpkin and filling it with chocolate is even better. QI shall,have to try this recipe soopn.

I have all the ingredients as soon as I pick up the tofu with a freebie coupon. Making this since it’s so blessed cute and good for you too. Subbing stevia for the Splenda since I it’s what I have on hand.

In recipes like this, tofu is perfect for giving that smooth texture. This one looks like it’s pretty simple to make, too–except for the hollowing out the oranges part, so I’ll probably just try the chocolate mousse. Thanks.
I don’t like tofu…so I am thinking about making them for the princess but with a good homemade chocolate pudding for the filling.
This IS a cute recipe! I like the addition of the tofu here, always good to get more protein. I’m wondering – instead of oranges, we could use the little baby pumpkins, too, right? Then the stem piece would be a little “hat” or handle. Just a thought! I see these teeny pumpkins around, just about the size of oranges, and thought they’d work well, too.
