When it is hot and miserable out, the last thing I want to do is cook. Plus, with the healthy changes I have been making to my eating plan, cooking is not big on my list anymore. So I look for delicious alternatives that I can make or pick up with little fuss and not much muss! I was excited to try out the new salads from Del Taco that launched this week. Oh My Goodness! Can we say Hurray!

Handcrafted Ensaladas!

The Del Taco Handcrafted Ensaladas are made to order salads you’ll crave for under 600 calories (with cilantro pepita ranch dressing)! Each salad is made to order for you with a fresh lettuce blend, hand sliced avocado and fresh made tortilla chips, and pico de gallo that is also made from scratch. You’ll be surprised to get this quality at this price from a Del Taco or drive-thru!

Mexican Chopped Chicken Salad
Signature Taco Salad

 

Prefer ground turkey over beef? Just ask for it to be substituted! Going veggie? No problem, just ask for your salad without meat.

Salad Descriptions

Chicken Bacon Avocado Salad: features freshly grilled marinated chicken, fresh sliced Hass avocado, crispy hand-chopped bacon, handmade pico de gallo salsa, chopped cilantro, and fresh house-made tortilla chips atop a mix of fresh crisp romaine and iceberg lettuce. Served with new cilantro pepita ranch dressing and only 590 calories.

Mexican Chopped Chicken Salad: includes a fresh blend of romaine and iceberg lettuce topped with fresh sliced Hass avocado, handmade pico de gallo salsa, chopped cilantro, fresh house-made tortilla chips, spicy jack cheese, seasoned black beans, and freshly grilled marinated chicken. Served with salsa casera and only 510 calories.

Signature Taco Salad: features seasoned beef, freshly sliced Hass avocado, handmade pico de gallo salsa, cheddar cheese freshly grated from 40-pound blocks, chopped cilantro, seasoned black beans, fresh house-made tortilla chips, and real sour cream on a mix of fresh crisp romaine and iceberg lettuce. Served with salsa casera and only 540 calories.

Each of Del Taco’s new Handcrafted Ensaladas are served in eco-friendly containers made from recycled beverage bottles.

Mexican Chopped Chicken Salad

My Thoughts: I chose the Mexican Chopped Chicken Salad and I was surprised at how big it was. This is a salad totally worth the price. Super fresh lettuce that is not made of weeds is a huge plus for me! The beans and the chicken were warm and when I mixed it all together with the dressing, it was fabulous!

And speaking about the dressing! When I am eating low carb and/or low cal, I do not use a creamy dressing. I love to use salsa on my salads and this Salsa Casera dressing that came with the Mexican Chicken Salad was so perfect. Just the right amount of heat and the flavor was right on. It tasted like my favorite Mexican Restaurant salsa and brought the whole salad together.

This salad was a great size. Not too big and definitely not small. I was full and so satisfied. I love this salad!

When I need a fast lunch when working or dinner when I don’t feel like cooking, these salads from Del Taco are going to the top of the list.
