Creamy Cucumber Tomato Salad Recipe

It’s hard to believe but gardening season will be winding down soon and Fall will be setting in. Sigh…summer seemed to just fly by this year.

Anyway, I’ve had an exceptionally great crop of cucumbers this past year and I’ve been busy canning several jars of pickles and of course whipping up some fresh cucumber salad. Today, I am sharing my recipe with all of you.

Cucumber Tomato Salad Recipe

Creamy Cucumber Tomato Salad Recipe

2 medium sized cucumbers
2-3 tablespoons granulated sugar
1 small container sour cream
1/8 cup of finely chopped onion
12 red cherry tomatoes, sliced in half
salt and pepper to taste
celery seed to taste

* Optional: Sprinkle some finely chopped fresh dill on top for garnishing.

Wash and Peel the skin off of your cucumbers and slice thin. Empty the contents of the sour cream container into a medium sized bowl. Stir in finely chopped onion, granulated sugar, salt, pepper and celery seed. Gently fold in your cucumber slices and then fold in the sliced cherry tomatoes. Seal the bowl and refrigerate overnight to allow the flavor to infuse into the cucumber slices. Serve cold.

    A variation of this that my husband likes is:

    Freshly chopped green bell peppers and slices of yellow tomatoes stirred into it.

    This looks like a great way to use fresh cucumbers and tomatoes. This looks like a recipe my family would really enjoy.

    My usual cucumber salad involves yogurt and mint. Your recipe will be a nice change from that. Fresh cukes are among my favorite things about summer, and I’m really going to miss them. Anyway, thanks for sharing your recipe.

    Well this recipe just looks yummy and I love yogurt so would sub that for the sour cream. The salmonella contaminated cucumbers in the news make me wish I grew them myself, but just not possible in a tiny second floor city apartment. Thanks for the recipe.
