With Labor Day tomorrow…people across the country are preparing for the last official holiday of the summer. It’s safe to say a majority of people will be enjoying a BBQ on at least one day of the long weekend. There will be more than enough hot dogs and pasta salads to fill up on, but what if you’re looking for some lighter, healthier fare to fill up on?
The great folks over at Medifast sent over these two “healthier” recipes for the TwoClassyChics blog readers to enjoy.
Bean Dip Recipe
Prep time: 2 minutes Yield: 2 servings
2 packets Medifast Chili
2 packets Medifast Multi-Grain Crackers
½ cup water
¼ tsp onion powder
¼ tsp cumin
¼ tsp chili powder
¼ tsp garlic powder
Boil the water. Mix Medifast Chili and water in a large, microwave-safe bowl. Microwave on high for one minute. Mix in spices and stir. Microwave on high for one minute more. With a hand mixer or blender, blend until smooth. Serve with Medifast crackers.
Strawberry Shortcake Recipe
Prep time: 5 minutes Yield: 4 servings
4 packets Medifast Strawberry Shake
4 Tbsp egg white
2 tsp baking powder
¾ cup water
1 packet sugar-free strawberry gelatin (powder)
In a medium bowl, combine the strawberry shake mixes, egg whites, baking powder, and water. Mix well. Pour mixture equally into four microwavable custard cups. Microwave on high until done, one to two minutes. Remove and let cool. Meanwhile, mix gelatin according to directions. With a fork, poke holes in each cake, and pour ½ cup gelatin over each cake. Refrigerate until set.

That bean dip would be wonderful and the strawberry shortcake is worth trying – never have made that in the microwave.
What green things are in the bean dip? I’d add green onions but they aren’t listed in the recipe.

That strawberry shortcake recipe is really interesting and different. My daughter loves strawberry shortcake. What a creative way to have it!
I most intrigued by the strawberry shortcake recipe which is microwaved, saving both time and heat. I haven’t yet used the microwave to make many desserts.
