The other night my hubby was craving pancakes. Yes, that is a strange thing to crave, but hey, sometimes they just sound good. Since I don’t make pancakes hardly ever, I had not mix or anything in the house. So I found this awesome recipe over on Food.com by Bill Hilbrich called Pete’s Scratch Pancakes. We did not have all of the right ingredients and added some of our own too. But the results were awesome! I will never buy a box mix again!
Classic Homemade Pancakes Recipe
2 cups Whole Wheat flour
3 tablespoons granulated sugar
1 teaspoon salt
2 tablespoons baking powder
2 large eggs beaten
1/4 cup butter, melted
2 cups milk
1 teaspoon vanilla extract
Directions: Mix together all of the dry items. Slowly add the wet ingredients, combining together. Let it sit for 5 to 10 minutes before ladling onto a flat pan for cooking.
These come out fluffy and so delicious! Our new go to for pancakes! Oh, they do soak up the syrup, so be prepared!

I don’t find pancake mixes to be that much easier than stirring together a few ingredients, and it’s one less thing taking up precious cabinet space. This looks like a nice recipe, with the melted butter and vanilla. And I bet the whole wheat flour gives them a nice flavor, too. Now you’ve got me craving pancakes, too!
I like the use of the whole wheat flour, which is probably why so much baking powder is used. I shall try this recipe soon
I like the addition of vanilla to the recipe and the use of whole wheat flour. Nothing beats homemade pancakes.

Einkorn Wheat flour is lower on the Glycemic index. Give it a try instead of regular wheat flour. For extra rich flavor, use buttermilk instead ( add 2 tablespoons cider vinegar to two cups light cream, allow to sit at room temp 12-15 min, use in the above recipe.)
I have made pancakes from scratch but never with wheat flour. I guess I dont use enough of it to have it on hand. I bake in the winter and might try these then. I cheat and use the box although I bet all the dry can be preemade and just add the wet when you want them.
Most people already have all the ingredients they need to make pancakes from scratch. I think I may never buy a box mix either. Thank you for sharing this recipe.
