My hubby was raised in what he considers the south. Oklahoma and Texas has a unique type of food and if you have been raised there or in the southern states, Pimento Cheese is almost a food group unto itself. I had never had the experience of eating this until many years after marrying my husband. Hubby and his mom thought I was nuts for 1). not ever hearing about it and 2). not ever trying it. While I do enjoy it occasionally, what I enjoy more is eating it on a burger. Hot off the grill, the cheese gets all melty and delicious. It is a taste sensation.
So you those of you that have been deprived like I was, here is the recipe we use for Pimento Cheese. You can enjoy it on sandwiches, with crackers (Ritz is my fave) or on top of a burger too.
Pimento Cheese Burger Recipe
Small box of Velvetta Cheese – grated
8 oz Sharp Cheddar Cheese – grated
1 Jar of diced pimentos with juice
3 Tbsp Mayo
1 Tsp yellow Mustard
3 tbsp Sour Cream
Directions: Grate your Velvetta cheese into a small bowl. Add the sharp cheddar and pimentos and stir. Mix in the mayo, mustard, and sour cream. I do it a bit at a time to get the consistency I want. Creamy. Refrigerate a few hours so everything comes together.
This was my burger without the bun, but definitely dress it up however you want! Enjoy!

I have never been anywhere in the south and have never heard of this. It sounds unusual and not sure if we would like it but can see how it would be a comfort food.

Are you serious that you had never had pimento cheese? Oh, wow, I loooove pimento cheese (KY born & bred, so maybe it is a Southern food, lol.) I had no idea it was just a regional food.
