No-Bake Cheesecake Recipe

no-bake cheesecake recipeTemperatures have been really nasty here in the northeast and for many of us…the last thing we want to do is heat up our kitchen by using the oven. If you are like me, you’ve been looking around for some great no-bake dessert recipes and today…I am sharing this yummy “no bake” cheesecake recipe from Chef Kim Lassiter, founder of Symply Pure and Decadent Bakery with all of you.

No-Bake Cheesecake Recipe

THE FILLING
· Two 8oz blocks of cream cheese or light cream cheese
· 1 pint of light or heavy whipping cream
· 1 tsp of pure vanilla
· 1 half cup of 10 ex sugar (confection sugar)
· 1/3 cup of white sugar

PIE CRUST
· 1 cup of gram cracker crumbs
· 1/3 cup of butter ( salted or unsalted butter either or)
· 1/3 cup or organic white sugar or you can use brown sugar

FILLING INSTRUCTIONS
· In a food processor combined cream cheese and white sugar
· In a mixer whip the heavy whipping cream to a soft peak, add the vanilla and 10 ex sugar
· Whip to a medium stiff peak. Should be able to lift with the whipping attachment; should be thick.
· In a large mixing bowl fold in the whipped cream into the cream cheese then spread or you can use a piping bag into your gram cracker crust and refrigerate for 4 hours and serve. (YOU CAN SPRINKLE REMAINING GRAM CRACKER CRUMBS FOR GARNISH)

CRUST INSTRUCTIONS
· In a food processor add gram cracker crumbs, sugar butter mix until combined and then press down into your pie tin, nice and firm
· Pour in cream cheese filling and refrigerate for 4 hrs.

    Since I love cheesecake I shall have to try this recipe. at least I will not have to use the oven on a hot day to make it! I might add a little bit of cinnamon or grated lemon peel to the filling.

    No bake? Right up my alley! I LOVE cheesecake, and if it’s no bake, then so much the better! The only change I would make (just personal preference), would to swap out half the cream cheese for ricotta – more like an Italian cheesecake. Yum!

    This is a nice cool dessert recipe for summer. I’ve used fat free cream cheese in cheesecake and couldn’t tell the difference.

    I love how easy this recipe is. I have not attempted to make a cheesecake because I always thought it would be too difficult or too many steps 🙂
