McCoy’s Rum & Sour Cherry Ice Cream Recipe
Sous Chef Richard Pelliccia, Fort Lauderdale Marriott Pompano Beach Resort & Spa
2 cups heavy cream
2 cups half and half
3/4 cup sugar
1 tablespoon vanilla extract
Rum Butter Ingredients:
2 cups McCoy’s rum
1/2 pound of butter
2 cups of dried cherries
1/2 cup of sugar
In mixing bowl add heavy cream, half and half, and sugar. Whisk together until sugar is dissolved. Add vanilla extract to mixture. Pour mixture into ice cream machine and mix until it becomes thick. Remove and place in the freezer. Start to reduce rum in a sauce pot to burn off the alcohol, add sugar. Reduce until thick. Add dried cherries and whisk in butter. Slow simmer until cherries become moist. Let liquid cool. Fold into the ice cream and return to the freezer.

Oh my, this recipe is so decadent. It shoukd taste so good, even if it is not too good for one’s cholesterol! I shall have to try it because I love tart cherries.
I have heard of ice cream and popsicles, too, with some alcohol, as it lowers the freeze point. This sounds yummy and luxurious! a well=deserved treat! I’d love to make it.
This sounds good! So you can burn off the alcohol?? I might give it a try then, it certainly sounds and looks delicious!
This is very interesting, I have never heard of an ice cream that has alcohol in it. Thank you for sharing this recipe, I think it would make a great party treat.
That looks so good. 95 degrees here today. Want ice cream.
This sounds delicious! I would love to give it a try!
This sounds really good and fun for summer. After the day that I have had I sure would love to have this right now. Have a nice night.
