Homemade Chocolate Whoopie Pies Recipe

I love to cook and bake but I admit…I am no expert! With that said, one of the things I’ve learned over the years is that anyone can be a great cook or baker if they have the right kitchen tools, cookware and bakeware. Yes…having the right products for the job can make all of the difference!

Last year I introduced you all to a great online kitchen store called Bakedeco. You can read my original review…HERE. I still use that pancake pan several times a week and to this day, it still looks brand new!

Today I am reviewing the Wilton Whoopie Pie Pan from Bakedeco. This is a non-stick, 12 cavity Whoopie Pie Pan that makes individual Whoopie pies. The baking pan comes with 2 Whoopie Pie recipes and a filling recipe to help you get started. The baking pan comes with a 10 year limited warranty from Wilton Industries. Wilton…it’s all a name we know and trust and Bakedeco carries many of the Wilton products.

I used this pan last weekend to make some homemade chocolate Whoopie Pies and wow…I was impressed! I got even browning and my little cakes were perfectly baked from edge to center! Once cool, they slid right out of the baking pan and if I wanted to…I could of just cleaned the pan with a damp paper towel. Love how easily these pans are to clean!

If you want to bake homemade Whoopie Pies…you definitely need this baking pan!

Chocolate Whoopie Pies

Whoopie Pies Recipe

1/2 cup butter or margarine, softened
1 cup firmly packed brown sugar
1 medium egg
1 tsp. vanilla extract
2 cups all-purpose flour
1/2 cup cocoa powder
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk
Prepared whoopie pie filling (see below)

Preheat oven to 350 degrees F. Light spray a whoopie pie baking pan with non-stick cooking spray. Set aside.

In a mixing bowl beat together the butter with the brown sugar until creamy.  Add in the egg and vanilla extract. Beat again until smooth.

In another mixing bowl sift together the all-purpose flour, cocoa powder, baking powder, baking soda & salt. Beat half of the dry ingredients into the first bowl until combined. Pour the remaining dry ingredients & the buttermilk into the first bowl & beat with an electric mixer until well combined.

Fill each cavity of the Whoopie Pie baking pan 2/3 of the way full. Use a spoon to level off the batter in each cavity. Place baking pan into the oven and bake for 8-10 minutes or until they are done. Remove and let them completely cool.

Whoopie Pie Filling Recipe

6 Tbsp. butter or margarine, softened
1 1/2 cups. confectioner’s sugar
1/8 tsp. salt
7 oz. marshmallow creme
1 tsp. vanilla extract

In a large mixing bowl beat the butter until creamy. Add in the confectioner’s sugar and salt, beat again. Beat in the marshmallow creme and vanilla extract. Keep beating the mixture until it gets more firm and thicker. It should be light, fluffy and spreadable. If needed, you can refrigerate it for an hour or two to get it to thicken up.

Spread the filling in between two of the cake halves. We add about 1 1/2 tablespoons of filling per whoopie pie. Once you have them filled and assembled, store them in an airtight container.
