Spring Sweet Pea Soup Recipe

Spring Sweet Pea Soup Recipe

Spring Sweet Pea Soup Recipe

2 pounds English peas
10 shallots sliced
1 pound butter
3 tlb tarragon
1.5 qt. chicken stock
Sugar as needed to taste
Salt & Pepper to taste
Crème fraiche
White truffle oil

Melt butter and add shallots, tarragon and sweat no color, until soft. Next add stock and bring to a boil, add peas and cook until just tender, adjust seasonings with sugar, salt and pepper use more or less sugar based on sweetness from peas. Add contents to a blender and puree until smooth, pass through a strainer pressing on solids to push through as much of soup as possible. Chill soup and garnish with more leaves of tarragon, crème fraiche, and truffle oil to guild the lilly. Another excellent addition would be fresh crab meat.

    This recipe for pea soup sounds delicious. It contains a lot of,butter, but I wouldn’t add the creme fraiche. I probably would add crab.

    I don’t think I’ve ever used truffle oil in a recipe. Bet it makes the dish though. I love pea soup too.

    Yum, this looks delicious. Some people put bacon in their split pea soup, I’m happy that there is no bacon in this one. I can’t wait to give this a try. Thank you for sharing this recipe.

    This looks delicious! I’ve always loved pea soup, but I”ve never tried making it myself. I especially like the idea of adding crab meat- I’d probably serve it as my main course that way. 🙂

    They are in Westchester – I’ve been there, but I haven’t had the Sweet Pea Soup. It looks wonderful! Next time I’m up there (maybe next month), I’m going to check it out! Meanwhile, thanks for this, pinned and planned!

    I make a very similar pea soup. So delicious and I serve it hot over rice. It is healthy, tasty and economical!
