Recipes Using Leftovers – Mexican Omelet

There are a few things that I love when it comes to food. Mexican cuisine is my all time favorite and I enjoy eggs a lot. I love the creativity you can express when cooking either of these items. So the other night we had Taco night which is very popular at my house. And of course there was some leftovers. A few days later, I was scrounging in the fridge before heading for the coast and decided to use the leftover meat in an omelet. So simple and it tasted awesome! So here is my recipe you can try.

Mexican Omelet recipe

Mexican Omelet Recipe

Ingredients:
3 eggs, beaten
Leftover Taco Meat
Leftover Beans
Shredded Cheese
Taco Sauce
Salt & Pepper

Directions:
In the microwave, warm up your leftover meat and beans. In a small, non stick pan, make your omelet. As it starts to set up, add your warmed up meat and some shredded cheese. Flip one side of the omelet over the top on the meat and continue to cook until done.

Serve with a side of the beans and add some hot sauce to the top. So good and easy too! Hope you like it!

    You forgot the jalapenos. It is not a Mexican dish with the spice of jalapenos.

    this is the nicest recipe I’ve seen using leftovers (not counting thanksgiving turkey or stuffing lol), I want to make this from scratch not wait for leftovers!!

    This sounds delicious. We love Mexican food, but sometimes don’t have quite enough leftover to make a full meal. An omelet is a great idea- thanks for sharing!

    As I was reading this, the only thing I could think was D’Oh! Why didn’t I think of this myself? It’s a great but simple way to use up a small amount of leftovers in a completely new way. Thanks for the idea! I’m sure I’ll be giving it a try soon.

    I think that using eggs for leftovers is a wonderful idea and I often make interesting omelettes. This recipe sounds delicious.

    Not a big taco fan so don’t have the leftovers but very easy to sub the ingredients. I like the recipe and always have leftover beans to use.
