Healthy Mexican Tostada Recipe

There are certain foods I cannot eat anymore. Well, I can eat them because I love it, but they do not love me back. I know you understand that! One of those items is flour tortillas. Some brands really bother me and make my stomach bloat terribly – I know, Too Much Info. So in order to eat my favorite cuisine, Mexican, I choose to stay away from the flour tortillas and choose corn. It is a healthier option and I have no issues at all.

On Mexican night at my house, tostada shells are offered for those like me that prefer corn and flour tortillas are offered for the others. It is easy to find pre-made shells that offer no preservatives and have not been on a shelf or in a package for a long time. Look in the Mexican Section or wherever tortillas are sold. Usually on the top shelf.

Anyway for a quick change of pace, Here is my favorite way to enjoy this tasty meal – perfect for lunch or dinner, fast.

Healthy Mexican Tostada Recipe

Healthy Mexican Tostada Recipe

Ingredients:
1 lb of ground beef
Taco or Burrito Seasoning
Refried or Spicy Pinto Beans
Package of Fresh Tostada Shells
Shredded Cheese
Salsa
Your Favorite Veggies

Directions: Prepare the beef with the seasonings. Warm the beans (Success tip from me – add a tiny bit of water, a little at a time (1/4 cup or less), to the refried beans to make them creamier. Plus, I mix 1 can of spicy with 1 can of regular for more flavor)

The tostadas do not have to be heated, but can be warmed in the microwave for a few seconds. Layer your meat and beans along with any of your favorite toppings like sour cream, guacamole, lettuce, tomato, onion, etc.

Serve with beans on the side if you choose or a nice salad. Great for lunch or dinner!

    What a delicious looking recipe, I would use turkey meat in this, and add some jalapenos. Love a little spice.

    This looks really good. I would think if you wished this would be great in a lettuce leaf wrap too. I can eat flour, which is a good thing because I love breads and such. Lots cant, and it would be tough to alwys substitute but sometimes the substitutions are better for you.

    Not too much info and I think many have issues with flour but eat it anyway and take stomach meds, antacids, etc, decreasing their stomach acid and setting them up for more troubles. I can tolerate corn and corn meal and these look good.
