Healthy Chicken Salad on Cucumbers Recipe

I am an appetizer kind of gal. I love munching on finger foods even more than eating a full meal. I have been known to bring carrots, celery, peppers, radishes, and other veggies with some dip to work as my lunch. So when it comes to parties or light lunch ideas, I loo to appetizers and finger foods.

One of the dishes I made for hubby’s party was this super easy yet healthy recipe that can be whipped up in just a few minutes. I saw it on Pinterest and thought it to be the perfect finger food, in my opinion, with lots of flavor and a bit of crunch. I loved it and others did too, but some did not care for it. So it is a matter of texture and opinion, just like any recipe! Maybe you want to give it a try!

Chicken Salad on Cucumbers Recipe

2 Cups Shredded, Roasted Chicken
1/2 cup Mayo
2 tbsp Sour Cream (optional)
2 Stalks Celery, chopped
Salt
Pepper
1 tbsp Lemon Juice
2 Cucumbers, sliced in rounds

Directions: Cook and cool your chicken. Remove the skin, shred into bite size pieces. Place about 2 cups into a bowl. Add in all other ingredients, except the cucumbers. Mix and adjust the seasonings to taste. If you like it a bit more creamy, the sour cream will help with that. I usually just use mayo.

Peel and slice your cucumbers into rounds. Lay them on a tray and top with a dollop of chicken salad.
