A few weeks ago I shared with all of you two delicious recipes courtesy of the Daniel Diet Plan. We had a great response here on the TCC blog with those two tasty dip recipes that we wanted to share another recipe from them with all of you today.
Baked Oatmeal Bars Recipe
2 c. old-fashioned rolled oats
1 ½ t. baking powder
½ t. salt
2 ½ t. cinnamon
4 t. of liquid stevia extract
1 c. unsweetened coconut milk
1 egg white
½ c. unsweetened applesauce
1 ¼ t vanilla
1 c. 70 percent bitter sweet chocolate chunks, finely chopped
Preheat oven to 350; spray coconut oil on 8×8 pan. Combine oats, cinnamon, baking powder, and salt in a food processor and pulse to mix well. Add milk, egg white, applesauce, stevia and vanilla to dry ingredients. Mix well. Gently fold in chocolate chunks. Pour batter into prepared pan and bake 30 minutes. Remove from oven and cool slightly before cutting into squares. Makes 8 large squares or 16 smaller squares. Can substitute raisins, cranberries, dried cherries, etc, or reduce amount of milk and add Peanut butter.

Looks tasty I have at a plateau with my diet.
I already made a version of this recipe. Since I had no applesauce on hand I used a banana and cranberries.
As much as I love cookies, I rarely bake them because all that shaping or cutting seems like so much extra work. That’s why I love bars and bar cookies, and this recipe looks really good. I think I’ll figure out how much granulated sugar to substitute for the liquid stevia, and I’ll be off and running. Thanks!

I really like these healthier recipes, especially snacks like this. Oatmeal and chocolate are great, and I know the use of applesauce and stevia helps to make this healthier. It sounds really yummy. I’m glad you are doing more of these recipes. Does the book give the nutritional information?

I have never made these before but they sure sound good and one recipe that I need to save thanks for sharing this one.
I like this recipe, low in sugar, fat and gluten, all of which I watch. I’ll have to take a look at that cookbook.
