Chocolate Oatmeal No-Bake Cookies Recipe

Chocolate Oatmeal No-Bake Cookies Recipe

I love to make homemade cookies for my family but on some days, I just don’t have 2 hours to spare to make them. Plus, if it is during the summer season when temperatures outside are blazing 90+ degrees, I don’t want to turn on my oven and heat up the kitchen.

To solve all of those problems I turn to no-bake or stove-top cookie recipes and use about a dozen different recipes to make various cookies. Today, I am sharing one of those with you and over the coming weeks, I will share more.

These cookies are delicious and are super easy-to-make. My family eats them up in rapid fashion when I make them.

Chocolate Oatmeal No-Bake Cookies Recipe
Recipe Type: Cookies

Quick and Easy Stove-Top Cookies
Ingredients
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup cocoa powder
  • 1/2 cup butter or margarine
  • 2 1/2 cups quick cooking oatmeal
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
Instructions
  1. In a large saucepan combine together the granulated sugar, milk, cocoa powder and butter. Bring mixture up to a boil and boil for one minute, stirring constantly.
  2. Turn off the heat. Stir in the quick cooking oatmeal, creamy peanut butter and vanilla extract. Keep stirring until all ingredients are well-combined and the peanut butter has melted.
  3. Lay down wax paper or a nonstick silicone baking mat. Drop cookies by the tablespoon onto the paper or nonstick baking mat. Let them cool for one hour and then place them into an airtight container. Will keep for up to one week.

    These are always a hit at our house! My mister makes the best! Im not to good at baking

    I have to try this! I make no-bake bars, and I try to always have some on hand. I heat honey, nut butter, sometimes chocolate, and then add in dry ingredients always changing depending on what I have. Pour it into a pan lined with parchment, let cool somewhat then cut into squares with a bench scraper and refrigerate.

    These are easy to make, and as you said good for,hot days. Since I am a chocoholic I Probably would add unsweetened chocolate. I am looking forward to more no bake recipes from you.

    We LOVE these! When the kids were younger, we would meet up with family and go camping every summer. This was a must have. We’d make a big batch before going. We still have these often and fondly call them Chocolate Rocks.

    One of my favorite recipes and I make them with coconut sugar. I remember our grade school would put huge no bake squares on little white paper plates for lunch dessert. So good.
