Easy Coconut Holiday Eggnog Recipe

I have never been a huge fan of eggnog until recently. Maybe it has been the home made stuff I have tried or the stuff that comes from the grocery store, but recently I bought a bottle of eggnog with the alcohol in it and it was awesome! Now maybe it is because I have matured and enjoy the taste. But maybe it is because it was different and made just right! So now I have been enjoying eggnog a lot more and when I saw this recipe from CocoJoy, I knew I had to share it with you all! Just right for the holidays, with a unique twist and easy too!

Easy Coconut Eggnog Recipe

Easy Coconut Eggnog Recipe
Recipe Type: beverage

Serves: 6 servings
Ingredients
  • 4 cans Coco Joy Coconut Water
  • 6 egg yolks
  • 1/2 cup sugar
  • 2 teaspoons pure vanilla extract
  • 8 ounces spiced rum
  • Ice
  • Cinnamon
  • Coconut flakes
Instructions
  1. Bring coconut water to a simmer in a medium pot over medium-high heat. Whisk together egg yolks, sugar, and vanilla in a bowl until smooth and pale.
  2. Gradually whisk half the hot coconut water into the egg mixture, then pour into pot with remaining coconut water. Cook over medium heat, stirring, until thick and mixture nearly coats the back of a wooden spoon, 2 to 3 minutes.
  3. Pour through a fine strainer into a bowl. Stir in rum, and refrigerate at least 3 hours and up to overnight. Pour into a pitcher, and serve over ice, garnished with coconut flakes and cinnamon

    This sounds really good! I like eggnog, although I have never made my own. I like the coconut addition to it!

    I have never tried egg nog and I will tell you why! For all of my 68yrs I have been led to believe that egg nog had raw uncooked eggs in it!! So I just always turned it down. Never even had an interest to look at an egg nog recipe until now..Your recipe sounds awesome. Especially since your egg yolks are cooked.Lol! I Pinned the recipe so I will have it.     I like eggnog, but the cost keeps me from buying the pre-made stuff. Which is probably just as well, since homemade is so much better. This coconut version is really unusual and might be fun for a Christmas Eve treat. Thanks for the recipe.

    I’ve got to be honest, I’m not much of an eggnog person. Seeing that this one has coconut water in it I would definitely try it, I do like coconut. I think you should make a chocolate flavored eggnog. Thank you for sharing this recipe.

    You’ve peaked my interest. I originally was reading this post for my husband…he loves egg nog and likes to try varieties. I’m not a fan, but I love coconut and can’t wait to give this a try.
