Easy Mini Fruit Pies Recipe

October 30, 2014 by Classystaff

My hubby loves dessert especially anything that resembles pie. He loves to bake but very often only a part of the dessert is finished and the rest is thrown out or our neighbors get a treat. Since my son and I are not a big dessert lovers, it makes sense for my hubby to make pies on a smaller scale. So he was playing around the other night and decided to make some mini fruit pies that are just the right size for snacking. These pies are so easy to make, even my hubby can do it…. and he did!

Easy Mini Fruit Pie Recipe

Ingredients:
1 box of pie crusts – the rolled ones
1 can of your favorite fruit pie filling
Sugar
Vegetable Spray for Baking

Directions:

Take a non stick cupcake pan in the 12 count size and spray the pan with the vegetable spray for baking. Unroll the pie crust and let sit for a minute or two to warm just a bit. Take a glass or biscuit cutter and cut the pie crust into 12 – 3″ circles and 12 – 2″ circles.

Take the 3″ circles of crust and place one in each of the cupcake slots of the pan. Tamp the crust around the pan opening, bringing it up the sides a bit. Fill with your fruit filling about 2/3 full and add the 2″ circle top to the pie, slightly pinching to seal. Sprinkle lightly with a touch of sugar.

Bake at 350 for 25 minutes. Cool and enjoy.

This is great when you don;t want to make an entire pie and I love using muffin tins to make so many different smaller recipes.

I Love Pie also but a whole pie always goes to waste so this would be awesome to make.

Great idea for a quick and easy dessert. I have some home-canned spiced apples that would be great for the filling. Thanks for the suggestion!

Love how easy this is. A lot of small desserts take lots of work, but this uses convenient products. Do you think you could freeze these?

I love making the mini pies- and honestly when we have a whole pie and sometimes isnt all eaten or we eat too much of it. Smaller is better! I think our favorite is probably peach pies made this way. Yours looks delicious!
