Easy Tomato and Jalapeno Omelet Recipe

In my home, we love eggs. I buy them by the flat and we eat them for breakfast, lunch and dinner. Sometimes even snacks, if I have hard boiled some or made deviled eggs or something similar. Eggs are a great source of protein and omelets are a delicious way to add in some veggies to perk up a meal.

Easy Tomato and Jalapeno Omelet Recipe
Recipe Type: Breakfast

Serves: 1
Ingredients
  • 3 large eggs
  • 1/2 of a jalapeno pepper – diced
  • 1/4 cup sliced tomatoes
  • 2 tbsp. finely chopped onion
  • 1/3 cup shredded cheddar cheese
  • Salt
  • Pepper
  • 2 tbsp. butter
Instructions
  1. Melt the butter in a medium non stick skillet.
  2. Combine together in the skillet the diced jalapeno pepper, diced tomatoes, onion, salt, ground black pepper.
  3. Saute for several minutes over medium heat to soften and combine flavors.
  4. Beat the eggs and pour them into the skillet.
  5. Cook on medium low heat until the eggs are set.
  6. Sprinkle the cheddar cheese on top of the veggies and eggs, then fold-over and flip to finish cooking.
  7. Garnish with additional cheese and tomato slices, if desired, and serve immediately.

    This sounds nice & spicy! I love omelets, but never thought of adding jalapeno.

    Wee too love eggs and have them for any meal. They can be prepared so many different ways and used for both sweet and savory dishes. I have never tried this particular combination of flavors in a omelet, so this might be the next egg recipe I make.

    (Easy Tomato and Jalapeno Omelet Recipe) This Omelet sounds great to me, I know my husband would enjot it, he likes the spicy stuff. But I am not a huge fan of anything real spicy-

    Nice omelet! We had quiche for dinner, as a matter of fact. I love the combination of eggs and cheese, especially with veggies added for flavor and texture.

    I love this easy egg recipe. I will have to make this. I love tomatoes in my eggs. Onions and cheese. I have to make this today!!

    Eggs are great…very versatile. They taste good and have health benefits. I agree that they can be used for any meal. We often have omelettes for dinner. I’ve put peppers in them before but hadn’t used tomatoes. It makes sense…so many people like salsa with their eggs. And you have to have cheese. Yum!

    I LOVE breakfast food and sometimes I have breakfast for dinner. This recipe sounds amazing and one I have got to try and soon. I have been stuck on making breakfast burritos lately with the green chilis and this sounds like a great new idea.
