Vegan Ice Cream Sandwiches Cookbook – Recipes for Dairy-Free Ice Creams & Cookies
If you follow a vegan or other dairy-free eating plan, then Vegan Ice Cream Sandwiches should be on your list. While gluten-free peeps will have to tweak the cookies, the collection of soy and coconut milk ice cream recipes are sure to delight.
Ice cream, how I love thee. My heart does, but my stomach hates me for it. My early days of dairy-free ice cream were somewhat disappointing. There was nothing on the market that matched the creaminess and decadence of its full fat dairy counterpart. Now there are several delectable vegan ice creams readily available that appeal to my heart, stomach and dairy-loving family. The expense is what keeps me from stocking my freezer full for the summer. At around $5 a pint, dairy-free frozen goodness stays in the store unless a good coupon or BOBO sale rolls around. With Kris Holechek Peters’ Vegan Ice Cream Sandwiches, I don’t have to wait! The recipes are much easier than expected and the ingredients are easily accessible.
I first discovered Peters when I stumbled across 100 Best Vegan Baking Recipes in my local library and again when I flipped through The I Love Trader Joe’s Vegetarian Cookbook. Her recipes include fantastic egg- and dairy-free versions of the traditional recipes I remember from pre-vegan days and fab twists on traditional combinations. Vegan Ice Cream Sandwiches follows that pattern. In addition to the classic chocolate cookie with vanilla ice cream combination we all expect in an ice cream sandwich (page 7), Peters pushes the envelope with carrot cake, tiramisu, Chai, cherry almond, and other deliciously wicked combinations. Since I keep most of the ingredients for vanilla, chocolate, or berry ice creams on hand most of the year, I decided to start with recipes featuring those goodies. Peters’ Strawberry Italiano Ice Cream Sandwiches (page 16) are outstanding. The Vanilla Sugar Shortbread Cookies and Strawberry Balsamic Swirl Coconut Milk Ice Cream can stand alone or blow your guests’ minds when combined. The Chocolate Soy Ice Cream (page 11) went from pantry to freezer in 8 minutes total (including prep time), and made a yummy movie treat. Peters’ Ginger Nut Ice Cream (page 22) is equally delicious on its own or when sandwiched between Carrot Cake Cookies (page 21).
There are 60 total recipes in the book and including Sweet Corn Ice Cream (page 28; try it) and a Fudge Swirl (page 39) to add to your favorite vanilla, chocolate, strawberry, or other ice cream. Follow the recipes as written, serve the cookies or ice cream alone, or mix and match your favorites as you see fit. I cannot wait to try the Vanilla Peanut butter Cup Soy Ice Cream (page 33) with the Vanilla Sugar shortbread Cookies (page 16) or Peanut Chunk Cookies (page 93). How does a warm peach pie topped with Pecan & Peaches Ice Cream (page 97) sound to you? I’ll let you know how it is this summer. Feeling like a bit of Cake Batter, Cranberry, or Maple Ice Cream? Peters included them. If you’re more of a sherbet or sorbet fan, Peters thought of you, too. I may not wait until fall to make the Pumpkin Snickerdoodle Sandwiches (page 103). Yes, I said Pumpkin Snickerdoodle Sandwiches. And the Chocolate Chip Cookies (page 41) may not make it to the oven for a sandwich. I might just swirl the dough into the Very Vanilla soy Ice Cream (page 42) instead.
Kris Holechek Peters’ Vegan Ice Cream Sandwiches does not disappoint. I’m so in love with it that I just added Peters’ Vegan Desserts in Jars to my Amazon wish list. Can you imagine – cute desserts in jars and homemade ice cream as gifts?
