Fresh and Easy Cucumber Salad Recipe

I love summer and all of the fresh veggies that we can handle. I love cucumbers and have wonderful memories of a cucumber salad that a friend of my mothers used to make when I was a child. It was amazing. My mom also made a cucumber salad that I grew up eating and still enjoy today. I want to share that recipe with you. It is fast and easy to prepare and bring a fresh, light twist to your dinner salad or side veggie.

Fresh and Easy Cucumber Salad Recipe

Ingredients:
2-3 good size cucumbers – peeled and halved length wise
2 heaping tbsp Sour Cream
1/2 tsp Salt
1 tbsp Dill

Directions:
Once your cucumbers are peeled and halved, use a spoon and scrape out the seeds. Cut each half length wise again so each cucumber is now in 4 long pieces. Cut into small chunks and place in a medium bowl. Sprinkle the cucumbers with salt and mix around so the are coated. (They should be salty but not overly coated. Adjust the amount of salt for the amount of cucumbers you are making). Let the cucumbers sit for 10-15 minutes to leach out excess water.

Once the cucumbers have sat for a bit, drain off the water but do not rinse the salt off! Return the cucs to the bowl. Place your sour cream in the bowl along with the dill. I like a lot of dill, you can adjust it to your tastes. Stir and serve immediately.

*note* This salad has to be finished right before serving as it will break down from the salt. You can prepare the cucs ahead but make sure to drain off excess water before mixing in the sour cream and dill.
