Homemade Strawberry Popsicles Recipe

strawberry popsiclesI love this time of the year when all of the strawberries are in-season here in the north east part of the country. There is nothing like growing them yourself or purchasing them freshly picked from the local farmer’s market. Trust me, fresh is a whole lot better than what you find in your local grocery store!

Last week I got busy and whipped up a batch of homemade strawberry popsicles for my family to enjoy. To make them, you will need to purchase some popsicle molds which can be found at many discount department stores across the nation. Personally, I like the 6-cavity plastic molds but you can use whatever you can find.

Homemade Strawberry Popsicles Recipe
Recipe Type: Dessert

Cook time: 2 mins
Total time: 7 mins
Serves: 12
Once these popsicles have been prepared you will need to freeze them for 2-3 hours before serving them. This recipe will make 12 to 14 popsicles depending on the size of your molds.
Ingredients
  • 1 cup freshly sliced strawberries
  • 1 small box of strawberry flavored gelatin
  • 3 cups of hot water
  • 1 pint of vanilla ice cream, softened
Instructions
  1. Use a food processor or blender to chop up the fresh strawberries into very small pieces. Boil 3 cups of hot water and stir in a small box of strawberry flavored gelatin until dissolved. Then stir in the finely blended up fresh strawberries until well combined. Finally, stir in the pint of vanilla ice cream until all ingredients are well combined together. Pour into popsicle molds and freeze for 2-3 hours or until firm.

    I love having a new recipe to add to my collection. Strawberries are on sale and so abundant. I love to make pie and now I can make these popsicles. This recipe would work with other fresh fruits too.

    We use this same recipe when we make homemade grape popsicles. Just use grape flavored gelatin and fresh grapes. The grape version is really delish if you love grapes!

    Great time to make these. Strawberries are fresh and on sale. Great way to get some people to eat fruit, too. Love that this uses real strawberries.

    I love popsicles in the summer to help keep cool. Not to mention they are less fattening than ice cream! Strawberries are my favorite fruit and I’ve never tried to make them myself. But I should and will!

    What a timely post. The grand kids are coming and I’ve been looking for different types of popsicles to make. As luck would have it I have strawberries on hand. I have to agree with you on fresh is so much better than what is found in the grocery store..

      I totally agree with you Grace! The calorie count, preservatives and other garbage in those store bought things are just not good for kids…well, for anyone, but especially for kids! I can make a slew of popsicles for 30% of the cost of the store bought stuff and they are better for us because I control the ingredients. I got a slew of homemade popsicle recipes!
