Pepper Jack Bacon Deviled Eggs Recipe

May 7, 2014 by Shelly

Pepper Jack Bacon Deviled Eggs RecipeHow many of you knew that May is National Egg Month? I didn’t know that until just recently and fortunately for me…I love eggs! Eggs supply a wide variety of vitamins and minerals such vitamins A, D and E. In fact, egg yolks are one of the few foods that naturally contains vitamin D. Eggs are also low in calories…they are about 75 calories per large egg. From hard boiled to poached, the incredible, edible egg is a nutritious powerhouse for meal and snack time.

The great folks over at KRUPS sent over this delicious egg recipe for us to share with all of you in honor of National Egg Month!

Ingredients
  • 12 eggs
  • 2 tablespoons finely shredded Pepper Jack cheese
  • 1/2 cup mayonnaise
  • 5 slices bacon
  • 1 tablespoon Dijon mustard
  • Chopped chives (garnish)
  • Paprika (garnish)
Instructions
  1. Place eggs in KRUPS Egg Cooker, and remove when hard boiled. Remove and rinse under cold water until cool.
  2. Place bacon in a skillet and cook on medium until brown and crispy. Crumble bacon and set aside.
  3. Peel the cooled eggs and cut in half lengthwise. Remove yolks and place into a small bowl. Mash egg yolks with mayonnaise, mustard, crumbled bacon and cheese. Fill egg white halves with the yolk mixture and sprinkle paprika on the tops of each egg. Add a sprig of parsley to each egg. Refrigerate until serving.

I love deviled eggs, great treat and a crowd pleaser In my home, love this twist on it, very different to me from just the plain way I make them. Great recipe!

The eggs sound yummy. I’ll have to remember Egg month along with Nurses week (this week) and Teacher’s day (yesterday).

I’d like to try these with the pepper jack cheese. I like zing in my deviled eggs.

These look so much better than the “plain Jane” ones I have always made in the past. I would love to try this version…cheese and bacon…yum! I just know we are going to love this!

I like deviled eggs and have never tried this version. I think that i would add the chopped chives and chop some parsley too into the interior mixture. Moreover, any mixture with bacon is loved in my family.

I’m intrigued. A big fan of deviled eggs. We love them in my family and don’t make them often. When the holidays roll around, everyone is excited. Eggs are on sale and we have them many times. My daughter, son, and I are big on tangy deviled eggs. We use mustard and vinegar but no mayonnaise. We also love peppers. I’m very interested in trying a modified version of ours with pepper jack cheese. It sounds like it would give it a nice zip.
