Quick Egg and Potato Burrito Recipe
I love breakfast foods and since I work from home and my husband is home most of the day too, I have to make foods for breakfast, lunch and dinner most days. That is why I look for easy creations that I can whip up quickly with little muss and fuss. Burritos are a way of life where I live and some of the most popular burritos include potatoes. Strange, I know, but they are good! Especially mine since I add plenty of delicious flavor to them!
Here is a tasty recipe for my Quick Egg and Potato Burrito that is a favorite of mine and my hubby. We enjoy it for breakfast, lunch or even dinner sometimes, when it just us two. Enjoy!
- 3 Eggs
- 1 can Sliced or Whole Potatoes-sliced, drained
- 2 Flour Tortillas burrito size
- Shredded Cheddar
- Hot Sauce or Salsa
- Season Salt
- Pepper
- Garlic Powder
- Onion
- 2 tbls butter
- In a small fry pan, melt your butter and add in the potatoes.
- Add in a bit of chopped onion, if you have it or onion flakes or powder. Season with your season salt, pepper, and garlic
- Stir to coat the potatoes and allow to cook for 5 – 10 minutes to brown, stirring often.
- Meanwhile prepare your eggs scrambled style and set aside.
- Warm your tortillas in the microwave between a paper towel for 10 seconds.
- Place your tortilla in a plate and add in your eggs, potato, cheese and salsa or hot sauce.
- Fold in the bottom of the tortilla in and roll your burrito closed.
- Serve and enjoy
