Quick Egg and Potato Burrito Recipe

I love breakfast foods and since I work from home and my husband is home most of the day too, I have to make foods for breakfast, lunch and dinner most days. That is why I look for easy creations that I can whip up quickly with little muss and fuss. Burritos are a way of life where I live and some of the most popular burritos include potatoes. Strange, I know, but they are good! Especially mine since I add plenty of delicious flavor to them!
Quick Egg and Potato Burrito Recipe
Here is a tasty recipe for my Quick Egg and Potato Burrito that is a favorite of mine and my hubby. We enjoy it for breakfast, lunch or even dinner sometimes, when it just us two. Enjoy!

Quick Egg and Potato Burrito Recipe
Recipe Type: Breakfast

Total time: 15 mins
Serves: 2
Ingredients
  • 3 Eggs
  • 1 can Sliced or Whole Potatoes-sliced, drained
  • 2 Flour Tortillas burrito size
  • Shredded Cheddar
  • Hot Sauce or Salsa
  • Season Salt
  • Pepper
  • Garlic Powder
  • Onion
  • 2 tbls butter
Instructions
  1. In a small fry pan, melt your butter and add in the potatoes.
  2. Add in a bit of chopped onion, if you have it or onion flakes or powder. Season with your season salt, pepper, and garlic
  3. Stir to coat the potatoes and allow to cook for 5 – 10 minutes to brown, stirring often.
  4. Meanwhile prepare your eggs scrambled style and set aside.
  5. Warm your tortillas in the microwave between a paper towel for 10 seconds.
  6. Place your tortilla in a plate and add in your eggs, potato, cheese and salsa or hot sauce.
  7. Fold in the bottom of the tortilla in and roll your burrito closed.
  8. Serve and enjoy

    Since I like potatoes, eggs and cheese how could I not love this recipe. I definitely would add onions to the potatoes to cook them and add to the burrito.

    Thanks for the great idea!

    I sometimes make what I call a “country scramble,” which is sauteed onions and potatoes (and whatever else I might have on hand, like green peppers and/or leftover turkey ham). When everything in the pan is cooked through, I just add some eggs and scramble it all together. I might just combine my “country scramble” with your Egg and Potato Burrito and see how it goes over here–I suspect it will be a hit.

    Oh this looks good! I love breakfast burritos. We have our own chickens and get 4 dozen eggs a day so we eat a lot of eggs!
