Making homemade fudge is something I do pretty often. My family loves fudge and over the years I have come up with some great “no fail” fudge recipes, like this particular recipe for Rocky Road Fudge. If you don’t like nuts in your fudge, you can certainly omit them. Matter of fact, my sister doesn’t use the nuts and will substitute with raisins when she makes it.

This is a really easy recipe to prepare.
- 2 cups semi-sweet chocolate chips
- 1 can (14 ounces) sweetened condensed milk
- 1 teaspoon vanilla extract
- 3 cups miniature marshmallows
- 1 1/2 cups walnuts, finely chopped
- In a large saucepan, combine the semi-sweet chocolate chips with the sweetened condensed milk over medium heat, stirring frequently until mixture is melted and smooth. Stir in the pure vanilla extract, miniature marshmallows and the finely chopped walnuts until everything is well blended together. Lightly spray a 13″ by 9″ glass baking dish with non-stick cooking spray. Pour the fudge mixture into the dish and let it cool for 1 hour before cutting it into 2″ squares.
Fudge Making Tips: I find that using a wooden spoon or a silicone spatula when stirring my fudge mixture gives me better results, not sure why though. In addition, once your fudge is cooled and firm…it can be frozen for later use. I freeze mine for up to 1 month and then thaw at room temperature. For a fun twist around various holidays, you can make it using miniature colored marshmallows. During the springtime we use pastel colored marshmallows which the kids love.

I haven’t made fudge in a long time since my husband is diabetic. However this is such an easy recipe that I am very tempted to make it and then freeze it so that I only have a little of it available from time to time.
I love fudge! I make a variation on Rocky Road–since my nephew is allergic to nuts, I put chopped up dried cherries in it & call it Bumpy Road, lol.
I’ve been wondering what to do with some sweetened condensed milk – it can’t get better than this. A perfect chocolate treat, a double batch, one to keep and one to share!
This looks so good. I never thought of freezing it though. That is a great idea. We could make several batches and freeze them up when we are in a cooking mood. The Mr. likes to cook too and this would be a favorite of his for sure.
