The Healthy Slow Cooker Cookbook by Judith Finlayson

The Healthy Slow Cooker Cookbook by Judith FinlaysonDefinitions of healthy eating have changed quite dramatically since “The Healthy Slow Cooker” was first published in 2006. In those days, it was one size fits all – low fat, low calorie and no saturated fat. Since then, there’s been a shift in thinking.

Many leading experts now feel that many of our modern diseases are directly associated with the consumption of wheat and advocate reducing carbohydrates. Another significant development is that the evidence against saturated fat has been slowly diminishing.

All of the recipes in “The Healthy Slow Cooker” cookbook by author Judith Finlayson are delicious, nutrient-dense and have a balanced approach that will suit a wide variety of people.

My Thoughts: I love cook books and own several hundred in my collection, many are from Robert Rose! One thing I love about these cookbooks is their size, they are not small paperback books and their font is large enough that I can read them without wearing my glasses. I also love the mouth-watering photography which always make for a great book!

This is the 2nd Edition in this popular cookbook and I can clearly see why it is a best-seller. All of the recipes are easy-to-prepare and the author offers additional preparation and serving tips along the way.

Last weekend I made the Zesty Braised Beef with New Potatoes recipe that is featured on page 189. I loved that I had all of the ingredients on hand and it was really easy to prepare. I prepared it in the morning and later that evening our dinner was done. It was delicious and the entire family enjoyed it.

Overall, I am loving this cookbook since I am a big slow cooker user. I own 4 different sized ones and use them several times a week.
