Slow Cooker Pecan Banana Bread Recipe

Slow Cooker Pecan Banana Bread Recipe

I love using my crock pot and I make all kinds of delicious treats inside it from soups, stews, casseroles, desserts and even baked goods from time to time.

A few months ago my sister shared her Slow Cooker Banana Bread Recipe with me and since that time, I have been using it since. I love that I can mix it up, put it in and walk away. Its really convenient for me and it makes a very moist bread!

Note: Once cooled, you can wrap and freeze this bread for up to 3 months because it freezes very well! I wrap mine in a few layers of plastic wrap and then slide my wrapped slices into a freezer bag. I can thaw all of it at one time or just a few slices at a time.

Slow Cooker Banana Bread Recipe

If you love using your crock pot aka the slow cooker, you will appreciate this recipe which makes a nice moist loaf of banana bread.
Ingredients
  • 1/4 cup wheat germ
  • 2/3 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup mashed banana
  • 1 teaspoon vanilla
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup pecans, finely chopped
  • non-stick baking spray
  • water
Instructions
  1. Spray a 1 quart baking dish with the non-sticking baking spray, coating the inside well. Sprinkle a tad of wheat flour on top of the surface.
  2. In a large mixing bowl cream together the softened butter, granulated sugar and the large eggs until well combined. Beat in the mashed bananas and vanilla extract until batter is smooth in consistency.
  3. Slowly beat in the wheat flour, all-purpose flour, baking soda and the salt. You want to do this slowly so that the batter isn’t flying all over the place. Hand stir in the finely chopped pecans.
  4. Pour your bread batter into your prepared pan. Pour 2″ of water into the bottom of your slow cooker, you will want to set your baking pan down inside the water.
  5. Place the pan into your slow cooker (the crock pot), cover and cook on the high setting for 2 hours or until the center is done. If you notice it getting too brown around the edges and top, reduce your slow cooker heat to medium or low.
  6. Remove from slow cooker and let the bread cool in the pan on a wire rack for about 20 minutes. Slice and remove bread from pan and store slices in an air tight container.

    I have never made it in a slow cooker but I love to use mine. It looks good.

    I’ve seen recipes that involve putting another pan inside the slow cooker but I’ve been kind of afraid to try them. I can see the advantage of putting water in the crock, around the pan. I’ll have to see what pans I have that will fit inside my slow cooker. Thanks for the recipe and the technique!

    I have never made baked goods in a slow cooker. This recipe sounds great, but I think I still prefer baking in the oven. I think you will get a better crust which I love. On the other hand this would be a time saver which can be so important.

    This sounds so good! And like you I LOVE my slow cooker, it and my tea kettle are my favorite kitchen appliances. I have made peach cobbler in the slow cooker & it turned out so great, now I can’t wait to try this!

    Ladies,

    I make all kinds of things in my slow cooker! I have made fruit cobblers, cakes, breakfast egg bakes, soups, stews, pasta dishes (including lasagna), various breads, etc. We will be publish a LOT more slow cooker recipes. It is my FAVORITE kitchen appliance!

    I had no idea that you could make this type of thing in a slow cooker! How awesome is this? VERY! and to be able to freeze it is even better. Since there’s just the two of us, that would ensure none goes to waste. Thank you for the recipe.

    Looks so tasty, I had no idea you can make it in a slow cooker. I tried once to bake a bread in it and it was a disaster. I’m going to give it a try

    Ok I never in a million years knew that you could make breads in a slow cooker. I am still a beginner and have really only made soups and stews but I have to try this recipe thanks for sharing.
