Old Fashioned Egg Gravy Recipe
When I got married, I brought with me the recipes that I had grown up with. Being a Yankee from the mid west and of German decent, my recipes are a traditional meat and potatoes type of fare. My hubby is a Southern boy and he was raised on a lot different type of food than I was. We mashed it all together pretty well. One thing I had to do was learn to enjoy different southern style foods that I had never had before. My Mother-in-law shared some of her tried and true family favorites with us and this old fashioned Egg Gravy was one of them. Her Grandfather used to make this for them.
I have to say that when I heard what it was called, I knew it would NOT be something I wanted to try. But the first time I ate it, I was hooked! Think country gravy with eggs and bacon over biscuits and you are pretty close to what this dish is all about!
- 12 hard boiled Eggs – peeled and chopped
- 8 Slices of Crispy Bacon – crumbled
- 1/4 c Bacon Drippings
- 1/4 c Flour
- 4 cups Milk – not Skim
- Salt & Pepper to taste
- 8 Biscuits or Toast
- Cook the Bacon and pour off excess grease keeping about 1/4 cup in the pan
- In the same pan add your flour, salt and pepper. On low heat, mix together until you have a golden roux
- Add the milk stirring constantly until thickened.
- Add the bacon and chopped eggs. Cook 4 minutes, heating through
- Serve over biscuits or toast
