Hearty Chicken and Noodles Recipe

I love cooking for my family. Over the years I have acquired many recipes that my family and I love to enjoy. Most of them are in my head so when Chris and Shelly asked me to share some of my favorite recipes, this hearty one was tops on my list. I love to make it on a chilly day as it is so warm and comforting! I hope you try it. You may need to adjust the quantities a bit as this is from memory with a little of this and a little of that…

Hearty Chicken and Noodles Recipe

Hearty Chicken and Noodles Recipe
Cuisine: American

Prep time: 1 hour
Cook time: 1 hour
Total time: 2 hours
Serves: 6-8
Handmade noodles in a delicious chicken soup
Ingredients
  • 1 whole chicken – cleaned
  • 1 onion- diced
  • 3 stalks celery – sliced
  • 2 large carrot
  • 2 large cans chicken broth
  • salt and pepper to taste
  • The Noodles Recipe –
  • 4 beaten eggs
  • 1 tsp baking powder
  • 1 t salt
  • 3 cups flour
Instructions
  1. Pour the broth into a large stew pot and add all ingredients.
  2. Cook the chicken until done and then remove from the stock and let cool.
  3. In the mean time, prepare the noodles using these steps below…
  4. In a medium bowl, beat 4 eggs
  5. In a separate bowl, Mix dry ingredients together and add to the eggs.
  6. Mix together to form the dough (you can use a mixer with paddles if you choose). The dough will be heavy.
  7. Take half of the dough and place on a floured counter.
  8. Knead well until blended, adding flour if sticky
  9. When it is pliable and dry, roll it into a roll with flour and cut into strips of desired width starting at the end.
  10. Unroll the dough and break into desired lengths
  11. Repeat with the remaining dough
  12. When all of the noodles are cut, spread them out to dry a for a bit.
  13. Meanwhile remove the skin and break your chicken into bite size pieces
  14. Put the chicken back into the pot and bring to a boil.
  15. Add noodles a handful at a time
  16. Cook until the noodles are not chewy and to deserved doneness
  17. Adjust seasonings
  18. Serve over mashed potatoes or as a soup

    This is a wonderful recipe. What makes it stand out from many other chicken recipes for me is the easy noodle/dumpling recipe that is part of it and makes the dish more comforting

    Looks delicious! I’ve never made my own noodles before, but this looks really good. It may be worth the extra work.

    Sounds like a great idea for a chilly weekend! I love the idea of “going all out” and making it with homemade noodles!

    I’m a homemade kind of cook myself, but I’ve only made my own noodles a few times. This meal looks great, although I’d probably do it over two days, one for the chicken and vegetables and one for the noodles, because of the amount of work involved. Thanks for sharing.

    This looks amazing. So warm, comforting, and filling. I love how easy the noodles sound, too. I’ve always been intimidated by doing my own but love the homemade taste. What a great recipe and perfect for these winter days. The wind here cuts you to the bone, and this would be a delicious meal to come home to.

    Are these noodles or dumplings? I know they are noodles but it looks almost like dumplings. Either way it looks absolutely wonderful. You are right, that kind of food is filling and comforting on a cold day!

    This looks great for one of those snowed in days. I love the hearty look of it and I love anything with chicken and chicken broth. Thanks for sharing this one and I love these old fashioned type recipes.
