Thanksgiving Dessert – Pumpkin Crunch Cake Recipe
I was sent some great bakeware and utensils from Good Cook for the Thanksgiving cooking and baking season. To get you warmed up and in the mood for some pumpkin cooking, I have 2 pumpkin baking projects that I made for you to enjoy.
The first one is the PEANUT BUTTER & PUMPKIN DOGGIE TREATS Recipe: that we featured a few weeks ago. The recipe is easy to make and while I did not have a dog bone cookie cutter, I did find the perfect size cutter in my drawer that is just right for a quick treat for Louie! He Loves These! The Good Cook Pumpkin Scoop (available at Walmart) and the awesome Good Cook Bakeware made these a cinch to make. The bakeware is heavy duty and bakes like a dream! Plus clean up is a snap! If you have a dog, you should give this healthy dog treat recipe a try.
I wanted to make a cake for my second recipe so I could use one of the nice Good Cook baking pans. They make baking super easy to do! This recipe is one that I found on Cooks.com. I only had Pumpkin Pie Mix in the cupboard and I wanted to use that instead of straight pumpkin. This recipe is super simple and whips up in a flash. Plus you probably have the ingredients in your pantry, just like I did. It is sweet and so delicious. It might be even better than pumpkin pie! I added the strusel like topping that was extra on the bottom to the top of the slice and it was fabulous! Give it a try!
- 30 can Libby’s Pumpkin Pie Mix
- 2 eggs
- 2/3 c Evaporated Milk
- 1 cup Chopped Walnuts
- 1 Box White Cake Mix
- 1/4 cup Melted Butter
- Cool Whip
- preheat oven to 400 degrees. Line a 9×13 in pan with wax paper. Beat the eggs, milk and pumpkin in a bowl until well mixed. Pour in pan. Sprinkle cake mix on top. Sprinkle nuts on top of that and then pour melted butter on.
- Bake at 400 for 15 minutes then drop to 350 and bake 45 minutes, until pumpkin is soildified. Cool completely.
- Turn upside down on serving dish and cover with Cool Whip. Refrigerate until ready to serve
