Good morning everyone! TGIF! The weekend is almost here and sadly, I have to work. I took off last weekend due to all of us being sick but this weekend, I have to go out and work regardless of still feeling crappy. In addition to that, I got a lot of baking that I have to do for some foodie reviews and I have to bake up treats for the ladies at the assisted living center this weekend. Lots to do on my weekend for sure!
Today’s Topic: Let’s talk about food, dinner to be more specific! On those busy weeknights when you need to throw together a dinner quickly to serve to your family…what is your “GO-TO” quick dinner/meal options? I pulled a breakfast for dinner last week and hubby through a fit! hahaha! Since I do a lot of freezer meals (homemade meals that I cook up and freeze for later)…I usually grab one of those out of the freezer. I usually keep 3 or 4 homemade meatloaves, lasagna and Mac N Cheese in my freezer at all times and rotate them around to keep things used up by EXP dates. If I am not doing one of my quick freezer meals, I will slap together some spaghetti, meatballs and Texas Toast. I would love to hear about your quick weeknight dinner ideas!

My go to is scrambled eggs on toast if I have eggs otherwise I keep a frozen lasagna or pizza for nights when cooking something healthier is out. Then again it’s just me and my mum who lives with me, and she’s who taught me about scrambled eggs for dinner.
Breakfast for dinner is great. From omelets to scrambled eggs and toast, we enjoy it sometimes. Last night our easy meal was beef stew. My daughter often cooks up lots of different meats and freezes them for easy meals later on. She had done some ground beef, turkey, and sirloin that we had cut for stew. The stew meat mixed with frozen veggies is a great base for beef stew either in the crock pot or the stove. Another easy one that we all love is chili or a chicken and vegetable stir fry. With the chicken you can even just grab a can of chunk chicken to work. Hope you all get to feeling better soon.
I love breakfast-for-dinner, but my spouse’s reaction is similar to your husband’s, so I don’t get to enjoy it very often. For quick dinners, though, I rely on turkey kielbasa, which I try to have on hand (they usually have long expiration dates so it’s easy to have one in the fridge). I just use my rice cooker, starting by sweating some onions right in the cooker, then adding in rice, sliced kielbasa, and whatever veg I have on hand. Some veggies like broccoli come out better in the steaming tray than cooking in the liquid, but I stir it all together for a one-pot one-dish meal. A salad on the side, and it’s done.
my husband loves breakfast for dinner! alot of the dinners i do are quick. we do blts often and i make cheeseburger pie which is quick to put together although it takes 25 mins in the oven.
We also like having breakfast for dinner if we are in a pinch. We also always have some brats and hotdogs in the house so we cab throw stuff on the grill and just add a few sides. Some of the McCormick dinner mixes have saved us as well (I like the Swedish Meatballs).

I am amazed at all you are able to accomplish , even when you and your hubby are feeling ill. Do try to get some rest. I am sure the ladies will love your treats when you visit them at Thanksgiving.
I don’t freeze many meals. I have some cooked chicken in the freezer. Otherwise for a quick meal I would use eggs or fresh fish or hamburgers or a stir fry with vegetables and perhaps tofu
As much as I try, I amlimited to just having homemade tomato sauce and vegan chili in the freezer. However, the sauce does come in handy for a lot of dishes!

My Quick dinner ideas is that make a roast and potatoes and carrots and put it is a bag and roast in the oven, and it lasts for days. I love having leftovers, and this really is a quick meal.
