Beyond Tacos Cheese Enchiladas Recipe
I love Ole El Paso® products and have been fortunate to feature them before on the blog. Tacos are always a favorite in out house but today I was challenged to go beyond Tacos with a kit I was sent to review for you.
Ole El Paso® offers so many different products in the Mexican food line that it is easy to develop a recipe using their trusted products. Today I was thinking about one of my families other favorites dishes, next to tacos, and that is enchiladas. So I knew that is where I was going with this Beyond Tacos challenge.
Everyone in this family loves cheese enchiladas so that was an easy choice when whipping up this meal. The folks from Ole El Paso® sent some enchilada sauce, soft tacos and refried beans to help create this dish. It is a simple recipe to make and something that you can easily whip up after a busy day. Here is what we did:
- 8 oz Shredded Mexican Mix Cheese
- 2 16 oz cans Old El Paso Enchilada Sauce
- 8 Old El Paso soft taco size flour tortillas or corn tortillas
- take 1 can of the enchilada sauce and warm it in a sauce pan. Take the tortilla and run it through the sauce to moisten it. Place the tortilla on a plate, fill with about 1 oz of cheese, placing it in a line right down the middle of the tortilla. Roll the tortilla up loosely and place it into a baking pan. Do this for the rest of the tortillas. Use the 2nd can of enchilada sauce and pour some over the enchiladas. Tops with shredded cheese and bake for 20-30 minutes in a 350 oven.
- * Optional* if you have any chicken left over you can add it to the enchiladas before rolling.. Also some enjoy a few sliced olives inside the enchilada as a different taste treat.
