When I was a little kid…my mother used to make the best homemade corn pudding and today…I am sharing her recipe with all of you. I have to admit…if you don’t like corn or pudding, you will not like this recipe. But for those of you who do, I think you will enjoy!
This corn pudding can be served warm, at room temperature or chilled, the choice is yours!
Homemade Corn Pudding Recipe
1/2 cup butter or margarine, softened
1/4 cup granulated sugar
4 large eggs
1/2 cup all purpose flour
1 tsp. baking soda
4 cups frozen corn kernels, thawed
1 can cream of corn
1 cup milk
1/2 tsp. salt
1/4 tsp. ground black pepper
Cream together the butter and granulated sugar. Add in the large eggs and all purpose flour until well combined. Add in the rest of the ingredients in the order they are given in the recipe until everything is well combined together, stirring the corn in last.
Place mixture into a glass baking dish (we use a casserole dish) and bake in a preheated 350 degree F oven for 25 to 30 minutes or until done.

This time of year I love to use fresh corn as much as possible and have been making my own cream-style corn (delicious!). Because your recipe uses frozen and canned corn, looks like it would be a great way to enjoy corn during the off-season. I love tried-and-true recipes, and I’ve definitely marked this one to make later in the year, when the fresh corn isn’t available–or affordable. Thanks so much!

I have heard of corn pudding, but never tired to make it. This is a recipe I shall want to try, but I am not putting on my oven in the middle of this horrendous heat wave, so this will wait a month or so.
I have to say I’ve never heard of corn pudding, but I’m intrigued. We make scalloped corn – different type of recipe completely – and eat it with meatloaf. Very good, warming, and comforting. I assume his brings bout he same feelings. What do you like to et this with? Any particular meal?

You can serve it with anything. We make it a lot when we grill out (burgers & dogs) or when we make pork chops…whatever.
I never had corn pudding and didn’t even realize that corn can be made into a pudding. But this sounds delicious and a recipe that my family would definitely enjoy!
