Popeye Classic Spinach Dip Recipe

We had company the other day so the hubby decided to make a recipe from the Allens site that offers over 400 different choices that uses their products. He made a healthy appetizer using the Popeye Spinach and he tweaked it a bit. It came out delicious! Here is the original recipe.
Popeye Classic Spinach Dip Recipe
1/2 Cup plain yogurt
1/2 Cup cottage cheese
1 (14 oz.) can Popeye Chopped Spinach, drained
1 Green onion, sliced
1 tsp. chili powder
Combine yogurt and cottage cheese, and stir until smooth. Stir in spinach, onion, chili powder. Place in serving dish. Cover and chill until ready to serve with fresh vegetables, crackers, or bread sticks.
What he did was take the ingredients, mix them up and added about a 1/4 cup of Parmesan cheese and a bit of garlic to it and then instead of chilling it, he baked it for 25 minutes. He served it with crackers, carrots and celery sticks and it was delicious! Check out the picture. I liked that it was not made with the rich mayo many hot dips are made with so we saved on calories there and the consistency was fine. It was tasty. Hubby now has an appetizer recipe that he can whip up easily.
Here is another easy recipe for you and your hubby to try. Simple ingredients and very easy to make. When it cools down and we are having soups, this is definitely on our menu! Doesn’t it sound awesome?
Allens Chicken Corn Chowder
12 oz. Skinless, boneless chicken breasts
2 cans (15.25 oz.) Allens Whole Kernel Corn
1 can (32 oz.) Reduced sodium chicken broth
1/4 Green Bell pepper, diced
1/4 Red Bell pepper, diced
1 Cup Milk
1 1/4 Cups Instant mashed potato flakes
Salt and Pepper
In a Dutch oven, combine chicken and broth. Cover; bring to boiling over high heat. Reduce heat. Simmer 12 minutes or until chicken is no longer pink. Remove chicken and place on a cutting board. Add half of both red and green peppers and Allens Whole Kernel Corn in Dutch oven. Stir in milk and potato flakes. Shred chicken using 2 forks. Return chicken to Dutch oven. Season to taste with salt and pepper. Sprinkle each serving with remaining Bell pepper. Serve.
