Easy Pistachio Salad Recipe

This recipe is compliments of my mother in law and I know that it has been around for a long time! In fact many of you will probably have this is your recipe box already. For those of you that have not experienced this tasty recipe, you need to add it to your easy dessert menu. This salad is not a salad in the normal sense of the word, but only in the fact that it is a mixture of deliciousness! This recipe is a perfect dish to take to potlucks, BBQ’s or make for a week night treat.

Easy Pistachio Salad Recipe

22 oz. Can Crushed Pineapple
1 box Pistachio Pudding
1 small container Cool Whip
1 bag mini marshmallows

Directions:
In a medium bowl, empty the pudding mix into the bottom of the bowl. Add in the pineapple, including the juice, and mix thoroughly. Add in the Cool Whip, mix together and then finally add in the mini marshmallows. Completely fold everything together and refrigerate for several hours, up to overnight.

    I do think that you should add the word dessert in front of salad in the recipe title. It is similar to the Ambrosia dessert salad. For some crunch I would add chopped pistachios on top before serving it.

    I wouldn’t call it a salad. I’d call it desert, and it looks yummy.
