An Over-Abundance of Fresh Cucumbers

I am not sure if I have told you all of this or not, but I love gardening and have a large vegetable garden and 4 flower gardens here on our property. Anyway, this year I planted around a dozen cucumber plants and they have taken off like wildfire! Lucky for us, we love cucumbers but I am running out of ideas on how to use them all up!

So far….we have been tossing them into our veggie salads, making cucumber salad and I did can a few jars of homemade pickles using them. A few days ago I sliced some up and made a vegetable snack tray along with fresh broccoli, cauliflower, radishes and carrot sticks. (made a great homemade veggie dill dip to go along with them).

Anyway, I need some more ideas on what I can do with all of these cucumbers because as the season goes on…I will have even more of them! Help!!! I need some fresh ideas and/or some recipe suggestions from all of our fabulous TCC blog readers!
